Betty's Mexican Chocolate Cake Glaze ◇ In this video, Betty demonstrates how to make a Mexican Chocolate Cake Glaze. This glaze is a perfect icing for a One Layer Mexican Chocolate Cake (which you will find in bettyskitchen). Ingredients: 1 cup confectioner's sugar (powdered sugar or icing sugar) ½ cup unsweetened cocoa powder 1/8 teaspoon ground red pepper (cayenne) ½ teaspoon ground cinnamon 1 tablespoon brewed coffee, cooled 5 tablespoons water (You may use less water, if you want a thicker glaze.) In a medium-sized mixing bowl, stir together 1 cup confectioner's sugar, ½ cup unsweetened cocoa powder, 1/8 teaspoon ground red pepper, ½ teaspoon ground cinnamon,1 tablespoon brewed coffee, and 5 tablespoons water. (You may use less water, if you want a thicker glaze.) When glaze is smooth, let it sit for awhile to thicken. Slowly pour the glaze over a baked, cooled cake, letting some of the glaze drip over the edge in places. Let sit for about 2 hours in order for the glaze to set. These are dark chocolate cookies that can be decorated for Halloween or other special occasions. Ingredients: 1 stick + 2 tablespoons butter, softened 1 cup granulated sugar 1/4 cup light brown sugar, firmly packed ½ cup cocoa powder (unsweetened) 1 teaspoon vanilla extract 1 egg 1 ¾ cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt In a large mixing bowl, beat 1 stick + 2 tablespoons softened butter, 1 cup granulated sugar, 1/4 cup firmly packed light brown sugar, ½ cup unsweetened cocoa powder, and 1 teaspoon vanilla extract on medium speed of an electric mixer, until fluffy. Add 1 egg, beating until blended. Set aside. In a separate, medium-sized mixing bowl, stir together 1 ¾ cup all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add to butter mixture, beating well after each addition. Form into logs of desired size. You may make them from 1-inch to 2 inches in diameter. Place each log on waxed paper, roll up, and secure the ends. Refrigerate 4 hours or longer. When chilled, unwrap logs and place on a cutting board. Slice logs with a chef's knife, about 3/8-inch wide (more or less, depending on the diameter of the logs). When cookies are formed, place them on parchment-lined baking pan(s). Betty's Version of Merrick Inn's French Silk Pie Recipe In this video, Betty makes her version of the French Silk Pie from her birthday dinner at Merrick Inn. This is a rich chocolate pie, trimmed with whipped topping in a graham cracker crust. YUMMY! Ingredients: 9-inch graham cracker crust, baked and cooled 1 stick butter (1/2 cup) 3/4 cup sugar 2 egg yolks 2 whole eggs 2 squares bitter (unsweetened) chocolate, melted and cooled 1 teaspoon vanilla extract whipped topping (for garnish) Cream 1/2 cup butter and 3/4 cup sugar. Add 2 egg yolks, and beat until well blended. Add 2 whole eggs, one at a time, beating after each addition. Add 2 squares of melted and cooled unsweetened chocolate and 1 teaspoon vanilla extract. Pour into baked and cooled graham cracker crust. Serve with whipped topping on top. This is a wonderful pie for chocolate lovers! It is also an elegant ending to an elegant meal. The test environment has been thoroughly tested to ensure the lowest background rates achievable given the overall environment. All tests were performed at night to reduce solar interference. Test 1 2 oz of Unsweetened Jasmine Green Tea were dried to a plastic sample disk. The sample disk was tested at a distance of 1 cm using an LND 7317 "Pancake" Geiger tube. Baseline of background -- 1099 counts in 30 minutes = 36.633 cpm Sample 1, Test A -- 1199 counts in 30 minutes = 39.966 cpm, net = 3.333 cpm Sample 1, Test B -- 1183 counts in 30 minutes = 39.43 cpm, net = 2.800 cpm Test 2 2 oz of Unsweetened Jasmine Green Tea was boiled down into a semi-viscous liquid and applied to a 2" diameter test paper. The test paper was tested at a distance of 1 cm, for an extended period, using an LND 7317 "Pancake" Geiger tube. The Chef and The Dietitian - Episode 52 - PB&J Bites Chef AJ and Julieanna Hever, the Plant-Based Dietitian, make Peanut Butter & Jelly Bites. PB&J BITES INGREDIENTS: 1 cup unsalted peanuts 1 cup pitted dates 1 cup unsweetened dried cherries 1 Tbls. alcohol-free vanilla extract DIRECTIONS: Blend peanuts in food processor. Add dates and blend together. Next, add 1 cup unsweetened cherries. Add alcohol-free vanilla extract and blend. Scoop out of food processor and place into silicone pans.

Add next flour, sugar, baking powder, salt, egg and 3/4 cup of chocolate chips and stir together. Sprinkle remaining 3/4 cup chocolate chips over top. Betty's Bacon Lover's Bacon Brownies In this video, Betty demonstrates how to make Bacon Lover's Bacon Brownies. I have heard people say that bacon makes everything better, so I decided to put crisp, crumbled bacon in a brownie batter and bake it. It was so good that I had to share it with you! Ingredients: Ingredients: 1 stick (1/2 cup) butter two 1-ounce squares of unsweetened chocolate 1 cup sugar 1 egg, well-beaten 2/3 cup all purpose flour 1 teaspoon baking powder ¼ teaspoon salt 1 teaspoon vanilla extract 8 ounces crisp bacon, crumbled Melt 1 stick butter along with 2 squares of unsweetened chocolate in a saucepan over low heat, stirring occasionally. Let this mixture cool to room temperature. To the melted mixture add 1 cup of sugar, 1 well beaten egg, 2/3 cup of all purpose flour, 1 teaspoon baking powder, ¼ teaspoon salt, and 1 teaspoon of vanilla. Mix all together and then gently stir in 8 ounces crisp bacon crumbles. Pour into an 8-inch by 8-inch baking pan (or dish). Bake at 350 degrees 20 to 25 minutes. Brownies will be done when a toothpick placed in the center comes out clean. Remove cooked brownies from the oven and cool to room temperature. Cut into 16 squares. Place on a serving dish. Chocolate Pudding & Nicolas Cage This is SUCH a yummy pudding! Who knew that tofu could make such a creamy, decadent, healthy pudding? Spicy Mexican Chocolate Pudding Recipe Ingredients: 1 cup grain sweetened chocolate chips ¼ cup unsweetened almond milk or soymilk ½ cup unsweetened almond milk or soymilk 2 packages firm silken tofu ¾ cup maple syrup 6 Tablespoons unsweetened cocoa powder 1 teaspoon cinnamon 1/8th teaspoon cayenne pepper (optional) 1/8th teaspoon red pepper flakes 1/8th teaspoon nutmeg 1/4th teaspoon ground ginger Pinch of salt 1 teaspoon vanilla ¼ jalapeno (remove majority of the seeds) Directions: In a double boiler, melt the chocolate chips with the ¼ cup of milk. When the chocolate has melted, spoon into a high powered blender or food processor. Combine the ½ cup milk and the jalapeno, chopped, in the processor with the chocolate. Mix on a high speed until the jalapeno pieces are thoroughly processed. Then, add the tofu blocks, maple syrup, cocoa powder, cinnamon, red pepper flakes, nutmeg, ground ginger, salt and vanilla. If you prefer a spicier pudding, add the cayenne. Blend until smooth and creamy. Spoon into a container and refrigerate for at least 30 minutes before serving. Garnish with ginger snap cookies and serve! Serves 6 Of course, tofu isn't for eating every day, but in moderation it's a great alternative to dairy. This is a pie of Southern origin, that has a dark chocolate cream pie layer topped with a rum-flavored custard. It is served in a pie crust and has whipped topping with chocolate curls on top. It is simply irresistible! Ingredients: 8-inch or 9-inch baked pie shell or graham cracker crust ¼ cup cold water 2 teaspoons unflavored gelatin 3 eggs, separated 1 cup milk ½ cup sugar ¼ teaspoon salt 1 ½ squares unsweetened chocolate, melted and cooled ½ teaspoon vanilla extract 3 tablespoons rum (You may substitute rum flavoring, if you like.) 8 oz. carton of whipped topping (or ½ pint whipping cream, whipped) unsweetened chocolate shavings or curls Into ¼ cup cold water sprinkle 2 teaspoons unflavored gelatin. Stir until combined, and set aside. In a medium saucepan, stir together 3 egg yolks, 1 cup milk, ½ cup sugar, and ¼ teaspoon salt. Failed Brownies : Cooking with Junkyard Brownies 1/2 cup butter 1 cup white sugar 2 eggs 1 teaspoon vanilla extract 1/3 cup unsweetened cocoa powder 1/2 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder Frosting 3 tablespoons butter, softened 3 tablespoons unsweetened cocoa powder 1 tablespoon honey 1 teaspoon vanilla extract 1 cup confectioners' sugar Directions Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan. Bake in preheated oven for 25 to 30 minutes. Do not overcook. To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm. Betty's One Layer Mexican Chocolate Cake ◇ In this video, Betty demonstrates how to make a One Layer Mexican Chocolate Cake. This is a rich, dark chocolate cake, enhanced by the flavors of cinnamon, red pepper, and coffee. Ingredients: 1 ½ cups all purpose flour 1 cup sugar ½ cup unsweetened cocoa powder 2 teaspoons ground cinnamon 1 teaspoon baking soda ¼ teaspoon ground red pepper (cayenne) ¼ teaspoon salt 1 cup cold water ¼ cup vegetable oil 1 tablespoon brewed coffee, cooled 1 tablespoon vanilla extract cooking oil spray In a mixing bowl, combine 1 ½ cups all purpose flour, 1 cup sugar, ½ cup unsweetened cocoa powder, 2 teaspoons ground cinnamon, 1 teaspoon baking soda, ¼ teaspoon ground red pepper, ¼ teaspoon salt, 1 cup cold water, ¼ cup vegetable oil, 1 tablespoon brewed coffee, and 1 tablespoon vanilla extract. Stir until mixture is smooth. Pour into a 9-inch cake pan that has been sprayed with cooking oil spray. Bake at 350 degrees (F) 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and cool in pan for 10 minutes. Remove cake from pan and cool on wire rack until completely cooled. Serve as is, or frost with your favorite frosting. I will be posting a Mexican Chocolate Glaze for this cake in a couple of days. Frozen Egg White Dessert (Part 1) I make this almost every night for my Meal 6. Typically I eat my frozen egg whites, brush my teeth, and head to bed, I put 6 egg whites, a dash of unsweetened almond milk, about 1 tbsp cinnamon, 1 tiny scoop of Kal Stevia (you can also use 2 Truvia packets but that has 3g carbs per packet) and 1 Tbsp unsweetened cocoa powder You just want to make sure you use the egg whites out of a carton so that they are pasteurized and safer to eat. Blend it for about 30 seconds then pour the mixture in 6 muffin tins and stick it in the freezer. Freeze for about 3 hours or so. This is SO good and feels like you are eating a dessert! It has about the consistency of a popsicle or fruit bar when done. The cinnamon and chocolate combo sort of has a "mexican mocha" taste to it. If you prefer you can use 1/2 scoop chocolate whey protein instead of the stevia and unsweetened cocoa powder. Freeze the same way as above. Also, FYI, these will be hard to pop out of the muffin tin when you first take them out of the freezer. Let them sit for about 4-5 minutes and they will be a lot easier to get out.

Ingredients: 2 ounces unsweetened chocolate 2 teaspoons light Karo syrup 2 teaspoons vanilla extract 3 tablespooons butter, softened to room temperature 1 ½ cups confectioner's sugar (powdered sugar or icing sugar) 3 tablespoons milk In a double boiler or small saucepan, melt 2 ounces of unsweetened chocolate over low to medium heat, stirring constantly. Remove from heat and let cool. When melted chocolate has cooled, place it in a large mixing bowl, along with 2 teaspoons light Karo syrup, 2 teaspoons vanilla, 3 tablespoons softened butter, 1 ½ cups confectioner's sugar, and 3 tablespoons milk. Homemade Dog CupCakes and Ice Cream Siberian Husky Shiloh and Shelby Treats Recipe Please Subscribe I made Homemade CupCakes and Ice Cream for Shiloh and Shelby! Muffins: 2 cups shredded carrots 3 eggs 1/2 cup applesauce, unsweetened 2 tsp. cinnamon 1/2 cup rolled oats 3 cups whole wheat flour Frosting: 8 oz. low fat cream cheese, softened 1/4 cup applesauce, unsweetened Instructions: Muffins: Preheat oven to 350° F Lightly spray cups of muffin tin. In a large bowl stir together the carrots, eggs and applesauce. Set aside. In another medium bowl whisk together the cinnamon, oats and flour. Slowly mix in the dry ingredients. Stir until well blended. Spoon mixture into muffin tin. The dough will be thick, so you may wet your fingers to press the dough into place. The dog cupcake will not rise very much, so do not worry about over filling the muffin tin. Bake for 25 minutes. Cool completely on a wire rack before frosting or serving. Frosting: Blend both ingredients with a hand mixer until well blended. Spoon into a pastry bag for easy decorating. Carob Chip Ice Cream Ingredients: 2 6oz containers of plain yogurt (low or non fat) 1 Tbsp. Honey 1/3 cup of carob chips Instructions: Mix all ingredients in a medium bowl until well combined. Coarsely chop walnuts using Chef's Knife. Place walnuts in (1-cup/250-mL) Prep Bowl; set aside. Combine flour, baking powder and salt in Small Batter Bowl. Betty's Blue Ribbon Brownies--50-Year-Old Recipe! In this video, Betty describes how to make an original recipe from 50 years ago--Best Ever Brownies! Yum! Yum! Ingredients: 1 stick butter or margarine (2) 1 oz. squares of unsweetened chocolate 1 cup sugar 1 egg, well beaten 2/3 cup self-rising flour 1 teaspoon vanilla extract 1 cup chopped pecans Melt the stick of butter or margarine along with the 2 squares of unsweetened chocolate in a saucepan over low heat, stirring occasionally. Let this mixture cool to room temperature. To the melted mixture add 1 cup of sugar, 1 well beaten egg, 2/3 cup of self-rising flour, 1 teaspoon of vanilla extract and 1 cup of pecans. Mix all together and pour into an 8 inch by 8 inch baking pan (or dish). Bake at 350 degrees 20 to 25 minutes. Brownies will be done when a toothpick placed in the center comes out clean. Ingredients: (2) 1-oz. squares unsweetened chocolate ½ cup butter, softened to room temperature 1 egg (I used ¼ cup egg substitute—Egg Beaters.) 1 tablespoon half-and-half 2 teaspoons vanilla extract 1 ½ teaspoons lemon juice 16-oz. package confectioner's sugar Place (2) 1-oz. squares unsweetened chocolate in top of a double boiler. Bring water in double boiler to a boil over medium heat. Reduce heat to low and heat chocolate until it melts. Set aside to cool slightly. Place ½ cup butter in a large mixing bowl. Mix with an electric mixer. Add cooled, melted chocolate, 1 egg (or ¼ cup egg substitute), 1 tablespoon half-and-half, 2 teaspoons vanilla, and 1 ½ teaspoons lemon juice. Mix well with mixer. This goes wonderfully well with Betty's Perfect Almond Biscotti, which you will find in bettyskitchen. Ingredients: 2 ½ squares unsweetened chocolate (These are 1-ounce squares.) ½ cup water ¾ cup sugar ½ pint whipping cream (1 cup) pinch of salt 6 cups milk additional whipped cream and a dusting of cocoa powder for topping (optional) To prepare chocolate base, heat 2 ½ squares unsweetened chocolate and ½ cup water together and stir until blended. Add ¾ cup sugar and a pinch of salt. Boil for 4 minutes, stirring constantly. Cool. When ready to serve, beat ½ pint whipping cream until stiff and fold it into chocolate syrup. Spoon 2 tablespoons chocolate mixture into each cup. Heat 6 cups milk to scalding point. Pour over chocolate in cups. When you pour the hot milk over the chocolate base, the whipped cream in the base rises to the top, making a frothy topping.
