Today I am going to talk to you about cooking Butternut Squash. Butternut squash is a sweet and delicious winter squash that tastes much like sweet potato. Even though winter squash is raised in the summer, they can be stored in a cool place for months before eating. So historically, this squash was saved and eaten during the long winter months. Butternut squash is also very nutritious. This squash is high in Vitamins A, C, E, Thiamin, Niacin, B6 and Folate. It is a great vegetable to add to your garden. To start this recipe, you need to wash the outside of the squash. Then take a large sharp knife. Cut the ends off the squash. Cut the wider section of the squash from the narrower section. Then slice these two sections in half. Scoop out the seeds. Place the flat sides of the squash down into a large casserole dish with about one half inch of water in the bottom. Cook it for at least 15 minutes in the microwave. (Until the entire inside flesh is soft.) Allow a few minutes for the squash to cool enough, so that you can touch it. Use a fork to pull away the skin of the squash from the cooked flesh. (Be sure to save the squash skin for your mulch pile or worm bin.)
