  • Betty's Light Lemon-Filled Angel Cake Recipe--Low Cal! In this video, Betty demonstrates how to make an elegant and easy low calorie dessert--Lemon-Filled Angel Food Cake. Great for dieting, but good enough for entertaining! Yum! Ingredients: 1 oz. pkg. instant sugar-free lemon pie filling mix 2 cups skim milk 6 oz. carton light lemon yogurt 1 ready-to-serve angel food cake (from your supermarket's bakery section) 1 8 oz. carton fat-free frozen whipped topping (refrigerated overnight) 1 lemon (sliced and divided into quarter-slices 1 bunch fresh mint (just a few mint leaves will do) Prepare the lemon pudding by combining the 1 oz. pudding mix with 2 cups of milk. Beat for 2 minutes, cover, and refrigerate overnight. (To speed things up, you may cool this quickly in the freezer.) When ready to assemble the angel cake, remove the chilled lemon pudding from the refrigerator, add 6 oz. lemon yogurt and stir together lightly, but thoroughly. This is the filling for the angel cake. Now, take the ready-to-serve angel food cake, slice it in three horizontal layers and place the largest layer (cut side up) on a cake plate. Spread some of the lemon-yogurt filling on the top only. Next, take the second largest layer and place it over the first layer. Again spread some filling on top of this layer. (There will probably be some lemon-yogurt filling left over--good to eat later!) Put the last (smallest) layer on top of the other two layers. With a knife or cake spreader, spread the sides, top, and inside cylinder of the stacked layer cake ...

Did you know that yogurt is still safe to eat after the sell by date for 7-10 more days? Think about how much stuff you may throw away when it still is goo to eat. Or worse yet what might happen to you if you eat something that has gone past its freshness. What to do with fish you have thawed and now can't cook it right away? Can you refreeze? Well that all depends on how you let it thaw. There are many fruits that should not be refrigerated but left on the counter. Do you leave your loaf of bread on the counter or refrigerate it? Hint here...remember the old bread boxes? Your bread will actually stale faster if you put in the fridge! Most vegetables keep their freshness 3-5 days so you need to shop more frequently. Scientists from the U of A and the National Institutes of Health publishes that estimates that American waste 40% of all food produced, bought or sold. That comes out to the equivalent of 1400 calories worth of food per person per day. Now that includes grocery stores that throw out produce that isn't perfect visually to those of us that just don't get around to cooking what we bought or letting those take out boxes sit too long in the fridge. • Betty's "Melt-in-Your-Mouth" Oreo Truffles--Recipe by Jessicab98 In this video, Betty demonstrates how to make "Melt-in Your-Mouth" Oreo Truffles. This recipe was submitted by Jessicab98, as a yummy way to welcome the holiday season. These truffles are truly wonderful! My family loves them! Ingredients: 1 package Oreo cookies, crushed in the food processor to fine crumbs 1-8 oz. package of cream cheese, at room temperature (fat free makes them too soft) 12 oz. semisweet chocolate chips ½ oz. paraffin , optional (from Betty: I added this, because it will make your coated truffles prettier and easier to handle; it is not necessary.) Crush the Oreo cookies and mix with cream cheese. Using a small melon baller, scoop and roll the mix into small balls. (I just pinched off a small amount and rolled it in my hand.) Put on a foil or wax paper covered baking sheet with a little space between them. Refrigerate for about an hour. Melt the chocolate chips and roll the Oreo balls to cover. Refrigerate on the baking sheet until set before moving them to a different container. These may be served on a fancy plate or placed in an airtight storage container to keep them fresh. You can roll these with just one hand. Melt the chocolate in the microwave, then place the glass bowl over another bowl with hot water in it to keep the chocolate soft. Also, if you tilt the bowl with the chocolate, you can keep most of it near the bottom and roll the balls near the top for a thinner coating. They can be served cold or room temperature. They're softer at room ...

  • Sweet Potatoes vs White Potatoes Holistic Nutrition Consultant, Karen Roth, MS, NC discusses the health benefits of Sweet Potatoes. Sweet potatoes make an ideal replacement for white potatoes. They have fewer calories, more fiber and a lot more flavor. This vegetable is an excellent source of beta-carotene, and a very good source of vitamin C, both these nutrients have anti-inflammatory properties and can be helpful in reducing symptoms associated with arthritis. And unlike regular potatoes that can aggravate arthritis that belong to the nightshade family, sweet potatoes do not. Some recent animal studies showed that sweet potatoes helped stabilize blood sugar levels thanks to the beta-carotene. So this is an excellent food for diabetics. When shopping for Sweet potatoes, avoid the ones that are in the refrigerated section of the store. And do not refrigerate them when you get them home. The moisture can alters the taste and cause them to sprout. Look for ones that are firm with not blemishes or cracks. They will keep for over a week if kept in a cool dark space. One of the easiest ways to prepare sweet potatoes is just by steaming them. You can cut them up into cubes and steam for just about 7-10 minutes depending on the size of your cubes. Top with some butter and eat. You can also, peel them before steaming, them mash them up add olive oil or butter and season with salt and pepper. Or try mixing in some cinnamon, sprinkle with shredded coconut and chopped nuts for a sweet ...

  • Betty's Lemonade Syrup Splash Recipe In this video, Betty demonstrates how to make a zesty Lemonade Syrup Splash. It is a concentrate that you can refrigerate or freeze and have instant, refreshing lemonade anytime! Ingredients: 1 cup fresh lemon juice (In a pinch, you may use reconstituted lemon juice from a bottle.) 2 cups sugar (You may use artificial sweetener, if you choose. I used Splenda.) 1 cup water Combine 2 cups sugar and 1 cup water in a saucepan. Bring to a boil, and boil for 5 minutes, stirring occasionally. Cool. (You may cool this syrup at room temperature for a bit, and then you may refrigerate it to make it cool faster.) Add 1 cup lemon juice. Store in a covered container in the refrigerator. (I use a *clean* mayonnaise jar with a lid, and shake the mixture every time I use it.) When ready to serve, add 2 to 3 tablespoons of the lemonade syrup to 1 tall glass of ice water. During the summertime this is great to keep in your refrigerator. You can have a tall, refreshing glass instantly, or you can use more of the syrup for a pitcher of lemonade for lunch or dinner! • How to make Tiramisu This is my first attempt at making Tiramisu. It turned out very well, although I thought a tad sweet. Next time, I might try cutting 1 TBS of sugar from the recipe. I might also try it with dark rum instead of Marsala, although the wine was very good. Using unsweetened cocoa and semi-sweet grated chocolate is important to counter the sweetness. It is also important to let the dessert sit overnight so that the ladyfinger biscotti-style cookies absorb enough of the moisture. Tiramisu is not an age-old recipe, handed down from generation to generation. Apparently, it was created in a restaurant in Italy in the late 60s or early 70s and has seen many variations since then. Finding a first recipe to make can be very intimidating but the process, itself, is not difficult. Ingredients: 5 egg yolks sugar 1 lb mascarpone cheese 1 cup whipping cream, whipped to stiff peaks 2 cups espresso or Strongly brewed coffee 1 TBS vanilla 1 cup Marsala wine 2 packages biscotti-style (dry) ladyfingers Directions: In the top of a double boiler, whisk 5 egg yolks with 1/2 cup of sugar until mixed and light yellow. Place over boiling water and reduce heat to simmer. Add 1 cup of Marsala wine and continue simmering, stirring constantly, until mixture forms peaks (roughly 6-10 minutes) Cover and refrigerate for 30 minutes. Whip one cup of whipping cream with 2 TBS of sugar until stiff peaks form. Add 1 lb of Mascarpone cheese to the egg mixture. Gently fold the egg mixture into the whipping cream ...

It is lighter on the calories than most cakes, plus it is beautiful, and it tastes superb! Ingredients: 1 angel food cake (I purchased mine from the deli section of my supermarket. You may make a homemade angel food cake, if you prefer.) 2 cups fresh strawberries, washed and sliced 8 oz. package cream cheese, softened to room temperature 14 oz. can sweetened condensed milk 1/3 cup lemon juice 1 teaspoon almond extract 8 oz. carton frozen whipped topping, thawed (I used about ½ of the carton.) additional sliced strawberries for garnish (optional) Remove the angel food cake from its container, and invert it onto a cake stand or cake plate. Cut a ¾-inch slice horizontally from the top of the cake and set it aside, remembering the orientation (for placing it back on top later). Now, cut about ½-inch from the center hole and ½-inch from the outer edge of the cake with a sharp knife, hollowing out a channel between the inner and outer edges of the cake. Carefully cut and pull cake pieces out with your fingers, leaving about ½-inch layer of cake on the bottom. Reserve the removed cake pieces. Beat 8 oz. cream cheese with a mixer, until light and fluffy. Add 14 oz. sweetened condensed milk, 1/3 cup lemon juice, and 1 teaspoon almond extract. Beat well, until smooth and combined. Fold in reserved cake pieces and 2 cups sliced strawberries. Spoon into channel formed by removing cake pieces ...
  • Betty's Lime Mist Gelatin Salad Recipe In this video, Betty demonstrates how to make a gorgeous and flavorful Lime Mist Gelatin Salad. It uses lime Jello, but is mixed with applesauce and lime-lime soda. The topping is cream cheese, marshmallows, and whipped cream, garnished with some beautiful maraschino cherry slices and chopped pecans. This is a side dish, accompanying Betty's Sunday evening meal. Scrumptious, and a delight to look at!!! Ingredients: 20 oz. applesauce 1 small package lime Jello (I used sugar-free.) 1 cup lemon lime soft drink, 7-up is fine. (I used diet soda.) 3 oz. cream cheese, cut into small cubes 2 cups miniature marshmallows 1/2 pint whipping cream Heat 20 oz. applesauce in a medium-sized saucepan, and dissolve a small package of lime gelatin in it. Add 1 cup of lemon-lime soda, and stir. Pour into a nice medium to large-sized clear serving bowl. Cover with plastic wrap and refrigerate 8 hours or overnight. Combine 3 oz. cream cheese, cut in small cubes, with 2 cups marshmallows, and 1/2 pint of whipping cream in a large mixing bowl. Cover with plastic wrap and refrigerate 8 hours or overnight. The next day, use a mixer to beat the marshmallow mixture until thick. (There can still be some lumps of marshmallows in it, if desired.) Spread over the gelatin salad. Garnish with a small amount of sliced maraschino cherries and chopped pecans (about 8 cherries and 1/2 cup chopped pecans.) Cover with plastic wrap and refrigerate until ready to serve. A splendid addition to almost any meal!

Wherever it originated won't matter as you eat this dessert, letting it dissolve in your mouth! It is a great dessert for Spring, since it is also called Crema de Sant Josep, or St. Joseph's cream, traditionally prepared on March 19th, St. Joseph's Day, the Spanish equivalent of Father's Day in the USA. INGREDIENTS: 1 cup Sugar 4 egg yolks 1 tbsp Cornstarch 1 Stick Cinnamon Grated rind of 1 Lemon 2 cups Milk PREPARATION: Serves Four The Perfect Make-Ahead Dessert This is a great dessert to make ahead of time, since it is very easy and requires 2-3 hours of refrigeration before serving. • Refrigerate This - "The Future" LYRICS: He said, "You will bet everything you have that when the sun sets somethings going to happen. One of you will make the other bet and take a chance 'cause life's a game, and you have to play without any plans." He always tries not to lie He tells the truth when he's unsure And he'll tell you if it'll be alright when he looks into the future He said "You will get anything you ever wanted if you just stop doubting that the world loves you" but that isn't true. "And you could think anything you please or want, but when you lay it all down you have to count on others for thoughts" And that's not true either He always tries not to lie He tells the truth when he's unsure and he'll tell you if it'll be alright when he looks into the future Time isn't so nice when you're not rolling the dice It ticks slow to the moment when you'll never have to get a fix again But it's even worse when you're talent is a curse Try telling the world that the future is no joke
