- Chocolate Truffles Dark Chocolate: 1 cup light cream 2 tbsp unsalted butter 8 oz bittersweet chocolate 8 oz semisweet chocolate 2 tbsp liqueur (optional) Heat cream and butter in saucepan over medium heat. Stir the butter into the cream when it melts, and bring to a boil. Remove from heat and add in the bittersweet, and semisweet chocolate. Stir until the mixture is smooth. Stir in liqueur if desired. Spread thinly over a piece of wax-paper on a cookie sheet. Refrigerate for two hours to harden. White chocolate: 6 oz white chocolate 5 tbsp unsalted butter 3 tbsp heavy cream 1/2 tsp orange liqueur Melt white chocolate, butter, and cream in a double boiler. Remove from heat and let cool. Crush the Oreo cookies and mix with cream cheese. Using a small melon baller, scoop and roll the mix into small balls. (I just pinched off a small amount and rolled it in my hand.) Put on a foil or wax paper covered baking sheet with a little space between them. Refrigerate for about an hour. Melt the chocolate chips and roll the Oreo balls to cover. Stir over low heat untill marshmellows have melted. Leave to cool to room temp. Whip the cream and then fold it into the marshmellow mixture. Pour over the prepared base. Place sliced strawberries over the marshmellow and then slowly pour the cooled jelly over the top.Refrigerate untill its firm. Keep time 2 days. you can double the marshmellow filling part if you want a thicker slice....it makes a very nice alternative to cheesecake. I have also made this when strawberries are NOT in season. Just pour the jelly straight onto the marshmellow base.....its still excellent!!!

Set aside. In a medium bowl stir together graham cracker crumbs and butter until moistened. Stir in melted milk chocolate. Press mixture onto bottom and sides of a tart pan with removable bottom. Refrigerate. ~ Meanwhile combine cream and corn syrup in a saucepan. Bring to a boil over medium heat. Remove from heat and stir in semi sweet chips. Let stand 5 minutes. Stir until chocolate is melted. Spread over prepared crust. Refrigerate 30 minutes. ~ Microwave caramel topping until heated through, stirring during heating. Add remaining milk chocolate chips and stir until chocolate is melted. Set aside. ~ Sprinkle 2/3 cup nuts over chilled tart. Carefully drizzle milk chocolate caramel mixture over nuts. Sprinkle with remaining nuts. Cover tart loosely. Refrigerate for at least 3 hours. Remove sides of pan and place on serving platter.

It is a concentrate that you can refrigerate or freeze and have instant, refreshing lemonade anytime! Ingredients: 1 cup fresh lemon juice (In a pinch, you may use reconstituted lemon juice from a bottle.) 2 cups sugar (You may use artificial sweetener, if you choose. - How to make Tiramisu This is my first attempt at making Tiramisu. It turned out very well, although I thought a tad sweet. Next time, I might try cutting 1 TBS of sugar from the recipe. I might also try it with dark rum instead of Marsala, although the wine was very good. Using unsweetened cocoa and semi-sweet grated chocolate is important to counter the sweetness. It is also important to let the dessert sit overnight so that the ladyfinger biscotti-style cookies absorb enough of the moisture. Tiramisu is not an age-old recipe, handed down from generation to generation. Apparently, it was created in a restaurant in Italy in the late 60s or early 70s and has seen many variations since then. Finding a first recipe to make can be very intimidating but the process, itself, is not difficult. Ingredients: 5 egg yolks sugar 1 lb mascarpone cheese 1 cup whipping cream, whipped to stiff peaks 2 cups espresso or Strongly brewed coffee 1 TBS vanilla 1 cup Marsala wine 2 packages biscotti-style (dry) ladyfingers Directions: In the top of a double boiler, whisk 5 egg yolks with 1/2 cup of sugar until mixed and light yellow. Place over boiling water and reduce heat to simmer. Now, cut about ½-inch from the center hole and ½-inch from the outer edge of the cake with a sharp knife, hollowing out a channel between the inner and outer edges of the cake. Add 1 cup of lemon-lime soda, and stir. Pour into a nice medium to large-sized clear serving bowl. Cover with plastic wrap and refrigerate 8 hours or overnight. Combine 3 oz. cream cheese, cut in small cubes, with 2 cups marshmallows, and 1/2 pint of whipping cream in a large mixing bowl. Cover with plastic wrap and refrigerate 8 hours or overnight. The next day, use a mixer to beat the marshmallow mixture until thick. (There can still be some lumps of marshmallows in it, if desired.) Spread over the gelatin salad. Garnish with a small amount of sliced maraschino cherries and chopped pecans (about 8 cherries and 1/2 cup chopped pecans.) Cover with plastic wrap and refrigerate until ready to serve. A splendid addition to almost any meal!

Make it the day before and leave it in the refrigerator until you are ready to serve. Then, heat the broiler, carmelize the sugar and serve! Beat Egg Yolks and Sugar In a pot, beat together the egg yolks and 3/4 cup sugar until thoroughly blended and the mixture turns frothy. Add the cinnamon stick and grated lemon rind. Ingredients: 16.5 oz. roll of refrigerated sugar cookie dough 15 oz. can ready-to-serve vanilla frosting 1 pint fresh blackberries, washed and dried with paper towel 2 pints fresh raspberries, washed and dried with paper towel Slice a16.5 oz. tube of refrigerated cookie dough into 1/2-inch slices, and place them on a round Pyrex pizza dish. (If you don't have a pizza dish, just place the dough slices in a circle in a baking pan.) Use your fingers to press the dough slices together evenly, forming one big cookie. Make sure that the thickness of the cookie is uniform throughout. Bake your large cookie at 350 degrees for 10 to 12 minutes. When it is done, remove it from the oven and let it cool completely. (You may put it in the refrigerator to cool quickly, after it has cooled a bit initially.) When your big cookie is cool, spread the entire 15 oz. can of vanilla frosting evenly on top of it. - Chocolate Billionaire Candy ( Home made Turtle candies) These are a lot like the Turtles chocolate candy. 1 package (14oz) caramels, about 53 of the small individually wrapped caramels. 3 tbsp of water 1 1/2 cups chopped pecans (or nuts of your choice, mixed nuts would be nice too) 1 cup crisp rice cereal (like Rice Crispies or Special K) 3 cups chocolate chips 1 1/2 tsp shortening Line two baking sheets with waxed paper, grease the paper and set aside. In a large saucepan, combine the caramels and water. Cook over medium low heat until caramels are melted and smooth. Stir in crisp rice and pecans. Stir until well coated. Drop by teaspoonfuls onto prepared pans. Refrigerate for 10 minutes or until firm Meanwhile, in a microwave, melt chocolate and shortening together and stir until smooth, add more shortening by 1/2 tsp until the chocolate is smooth and runny (if required) Dip candy into chocolate, coating all sides.
