It works especially well with a South Indian bouquet of fresh coconut, mustard seeds, cumin seeds, tomato and coconut milk. You'll need: 1 cup quinoa, rinsed 2 tbsp vegetable/canola oil 1 tsp black mustard seeds 1 tsp cumin seeds 1/2 fenugreek seeds 6 dried or fresh curry leaves 1/2 tsp turmeric powder 1 15oz can whole tomatoes, chopped, juices reserved 1/3 cup fresh coconut (you can get frozen shredded stuff at the Indian shops) 1 15oz can lite coconut milk 1/2 cup tomato juice (from the canned tomatoes) Handful cashews 2 cups broccoli florets salt and pepper 1) Warm oil in a saucepan until shimmering 2) Add cumin and mustard seeds. They should sizzle upon contact. Cook for 30 seconds or so, until they're done spluttering. 3) Add turmeric, fenugreek and curry leaves. Cook 30 seconds 4) Add chopped tomatoes and shredded coconut. Cook 5 minutes, until tomatoes break down a bit. 5) Add tomato juice and coconut milk. Season, and bring to a boil. 6) Add quinoa and cashews. Stir, then turn heat down to a simmer, cover and cook about 10 minutes until nearly almost cooked, but still soupy. 7) Add broccoli in one layer over the top of the quinoa. Citrus Glazed Sea Scallops with Lemon Parsley Quinoa Recipe Ingredients: 1 lb sea scallops, patted dry 2 tbsp The Republic of Tea Stir Fry Tea Oil 2 shallots, minced 1/3 cup Estancia Chardonnay 1 large navel orange, zest and juice salt and pepper, to taste Optional ingredient: red pepper flakes Preparation: Heat a skillet over medium high heat for approximately three minutes until very hot. Add oil and swirl to coat. Season scallops with salt and pepper to taste. Sear scallops for two minutes on each side. Remove from pan and place on a serving plate; set aside and keep warm. Reduce heat to medium and add shallots; sauté for two to three minutes until they become translucent. Remove pan from heat. Add wine and juice from the orange, scraping any browned bits from the bottom of the pan. Allow to reduce for five minutes until sauce becomes thickened. Pour sauce over resting scallops and top with orange zest. Sprinkle optional red pepper flakes to taste. Serve immediately. TOMOKO'S KITCHEN Quinoa Salad.mp4 Tomoko's Kitchen Quinoa Salad 1 cup Quinoa (I like a colorful salad so I use a mix of regular, red and black) 1/4 cup black beans 1 stick celery 1/4 red onion 1 mini cucumber 1/4 bell pepper 1 regular tomato or a few cherry tomatos 6 leaves chopped cilantro, some more for decoration 1 avocado 1/2 lime 1 teaspoon salt 1/8 teaspoon pepper Cook Quinoa Rinse quinoa (use a strainer) and add 2 cups of water into a pot If using pre washed quinoa just add 2 cups of water If you have time, soak quinoa in water for 15 to 20 min before cooking. You can use a rice cooker too! Bring to a boil and reduce heat quickly (to avoid overflow), simmer for about 15 min or until water is absorbed. (after quinoa is cooked, you could add salt and pepper) Black Beans Rinse black beans and soak in water for 6 to 8 hours (or my quick way using a thermos) then cook on low heat for 1 to 2 hours (my beans are a little firm so if you like soft ones, please soak and cook longer) Drain after cooked Vegetables are washed and paper pat dry. Chop veggies After Quinoa and beans have cooled down Add hard veggies and cilantro. Add salt and pepper into the quinoa. After mixing in the hard veggies, add avocado then squeeze lime juice on top of avocado (helps delay discoloring). Lime adds very fresh scent! Health Benefits of Quinoa Quinoa can be substituted for almost any grain in almost any recipe. It looks and tastes great on its own but I'll share with you some ways you can make this a beautiful side dish. Quinoa is commonly thought of as a grain and used as such; its really a seed of a plant in the same family of leafy greens like swiss chard. It has been around for thousands of years and dates back to 3000 BC Quinoa is perfect for summertime. Because quinoa is light and fluffy much like couscous and it makes a great cold dish. And best of all takes only 15 minutes to cook. Quinoa is an excellent source of iron which promotes energy production so its a great pick me up food, and a great source of fiber which can lower cholesterol and a good source for magnesium which relaxes blood vessels. So this is a heart healthy food. Its low on the glycemic index so safe for diabetics, its Gluten free, so the perfect grain for those with gluten intolerance and it contains more protein than any other grain; an average of 16%, compared with 7.5 percent for rice. Quinoa's protein is of an unusually high quality. It contains all 9 essential amino acids, no other plant source can claim this.
