Hot peanut oil (about 1 ½ tablespoons per skillet of breaded eggplant slices) 24-oz. jar Italian sauce or spaghetti sauce or equivalent amount of homemade Marinara sauce (I used Prego brand-Three Cheese variety in 23.5-oz. jar.) 2 cups shredded mozzarella cheese ¼ to ½ cup shredded Parmesan cheese Peel a large eggplant and cut into ¼ to 3/8-inch slices. Sprinkle each slice with salt, and place in a bowl. Let stand 30 minutes; rinse and pat dry. Dip in eggs and coat with Ritz cracker crumbs. Fry in hot peanut oil until golden brown on both sides. Drain on paper towels. (You may need to fry the slices in shifts, adding additional peanut oil.) Place half of the browned eggplant slices into a 12-inch by 8-inch by 2-inch (or similarly sized) baking dish. Spread with half of the Italian sauce. Top with half of the shredded mozzarella and Parmesan cheeses. Repeat layers. Bake at 350 for 20 to 25 minutes, or until mixture is thoroughly heated. It will be bubbly, the cheese will have melted and the eggplant will have softened. Serve immediately with hot baked bread! • Jamie's Ministry of Food | Parmesan Chicken Breasts | Channel 4 This is a great way to prepare chicken breasts. The texture of the crisp cooked prosciutto goes brilliantly with the tender chicken. Bashing the chicken out thinly before you start cooking means it cooks much faster than a regular chicken breast. If you have trouble finding prosciutto then any other kind of thinly-sliced ham such as pancetta, Parma ham or even smoked streaky bacon will work just as well. To prepare your chicken, grate your Parmesan. Pick the thyme leaves off the stalks Carefully score the underside of the chicken breasts in a criss-cross fashion with a small knife. Season with a little pepper (you dont need salt as the prosciutto is quite salty). Lay your breasts next to each other and sprinkle over most of the thyme leaves Grate a little lemon zest over them, then sprinkle with the Parmesan. Lay 3 prosciutto slices on each chicken breast, overlapping them slightly Drizzle with a little olive oil and sprinkle with the remaining thyme leaves. Put a square of clingfilm over each breast and give them a few really good bashes with the bottom of a pan until theyre about 1cm thick. To cook your chicken. Put a frying pan over a medium heat. Remove the clingfilm and carefully transfer the chicken breasts, prosciutto side down, into the pan Drizzle over some olive oil. Cook for 3 minutes on each side, turning halfway through, giving the ham side an extra 30 seconds to crisp up. To serve your chicken. Either serve the chicken breasts whole or cut them into thick ...

Canapés have reached a whole new dimension! Equipment and preparation: You will need 10 white round lollipop sticks, a round 9cm/3½in chefs' ring or cookie cutter and two baking trays. Ingredients * butter, for greasing * 80g/3oz parmesan cheese, finely grated * 1 tsp poppy seeds * 1 tsp sesame seeds Preparation method 1. Preheat the oven to 220C/425F/Gas 7, line two large baking trays with baking paper and grease them with butter. 2. Toss the cheese and seeds together in a small bowl. Sit a 9cm/3½in chefs' ring or cookie cutter on one of the baking trays and sprinkle a small handful of the cheese mixture into it, in a thin layer. Carefully lift the ring off to reveal a neat-edged disc of parmesan and lay a lollipop stick on top, with the tip of the stick touching the middle of the disc. 3. Repeat with the remaining cheese and sticks to make 10 in total (leaving about 3cm/1¼in spaces between them to allow for any spreading during cooking). 4. You should have a little parmesan left over, so use it to cover up the part of the lollipop stick resting on the disc. 5. Bake in the oven for five minutes, swapping the lollipops to a different shelf halfway through. The cheese should be lightly golden-brown and bubbling. 6. Remove from the oven and slide the paper off the baking trays and ...

  • Betty's Parmesan Chicken Casserole with Wild Rice Recipe In this video, Betty demonstrates how to make her delectable Parmesan Chicken Casserole with Wild Rice recipe. This is not your typical "chicken and rice recipe." This one sings with flavor! Ingredients: 2 lb uncooked chicken breasts or chicken breast strips 10 3/4 oz. can condensed cream of mushroom soup 10 3/4 oz. can condensed cream of celery soup 10 3/4 oz. can condensed cream of chicken soup 2 cups milk 1 stick margarine (cut into chunks) 1 box Uncle Ben's long grain and wild rice (fast cooking recipe) grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese) Cooking spray, if desired Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan. Place the saucepan over low heat as you work on the chicken. Stir the soup mixture occasionally. Now, remove all extra fat, skin, and gristle from the chicken and discard it. Cut the uncooked chicken breast meat into bite-sized chunks (or cubes). When the soup mixture is hot and smooth, start assembling your casserole. Use a large oven-proof casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time. Spray the baking dish with cooking spray, if desired. This is not necessary, because there is enough fat in the sauce from the margarine, but it might make serving a little easier. Now, pour one-half of the soup mixture into the ...
  • Betty's Parmesan Cheese Crisps Recipe In this video, Betty demonstrates how to make Parmesan Cheese Crisps that are similar to the ones that came with Rick's Caesar salad he ordered at Beaumont Inn at our 40th Wedding Anniversary dinner. You can serve these with any salad, or just eat them as a snack, with no accompaniment. They're great! Ingredients (for about 12 crisps): 1 cup finely shredded Parmesan cheese (You may use a different type of cheese, if you prefer.) In a large, shallow baking pan place about 12 circles of shredded Parmesan cheese. Try to make them compact, but do not mound them up. Place in a 300 degree oven, just long enough for the cheese to melt, and for the cheese crisps to begin to brown around the edges, about 8 minutes. Immediately remove them from the oven, and quickly transfer them (gently) to a cooling rack (or a flat tray). Let them cool completely. Place them on a nice serving dish, or arrange them to the side of any green salad. Delicious!!! --Betty :)
