Ingredients: 1 large eggplant Salt 2 eggs, well beaten 1 ½ cups Ritz cracker crumbs (Any cracker crumbs may be substituted.) Hot peanut oil (about 1 ½ tablespoons per skillet of breaded eggplant slices) 24-oz. jar Italian sauce or spaghetti sauce or equivalent amount of homemade Marinara sauce (I used Prego brand-Three Cheese variety in 23.5-oz. jar.) 2 cups shredded mozzarella cheese ¼ to ½ cup shredded Parmesan cheese Peel a large eggplant and cut into ¼ to 3/8-inch slices. Sprinkle each slice with salt, and place in a bowl. Let stand 30 minutes; rinse and pat dry. Dip in eggs and coat with Ritz cracker crumbs. Fry in hot peanut oil until golden brown on both sides. Drain on paper towels. (You may need to fry the slices in shifts, adding additional peanut oil.) Place half of the browned eggplant slices into a 12-inch by 8-inch by 2-inch (or similarly sized) baking dish. Spread with half of the Italian sauce. If you have trouble finding prosciutto then any other kind of thinly-sliced ham such as pancetta, Parma ham or even smoked streaky bacon will work just as well. To prepare your chicken, grate your Parmesan. Pick the thyme leaves off the stalks Carefully score the underside of the chicken breasts in a criss-cross fashion with a small knife. Season with a little pepper (you dont need salt as the prosciutto is quite salty). Lay your breasts next to each other and sprinkle over most of the thyme leaves Grate a little lemon zest over them, then sprinkle with the Parmesan. Ingredients * butter, for greasing * 80g/3oz parmesan cheese, finely grated * 1 tsp poppy seeds * 1 tsp sesame seeds Preparation method 1. Preheat the oven to 220C/425F/Gas 7, line two large baking trays with baking paper and grease them with butter. 2. Toss the cheese and seeds together in a small bowl. Sit a 9cm/3½in chefs' ring or cookie cutter on one of the baking trays and sprinkle a small handful of the cheese mixture into it, in a thin layer. - Home-smoked duck salad with baby beetroot, Parmesan and walnuts (حلال) Serves 2 Duck INGREDIENTS * 1 fresh duck breast * Oak chips or Earl Grey tea leaves, for smoking * Fine sea salt and freshly ground black pepper FOR THE BEETROOT * 12 baby beetroot * 2 tbsp olive oil * 3 sprigs thyme * 3 garlic cloves, lightly crushed with the side of a knife * Quarter of a small red onion, peeled and finely sliced * 2 tsp red wine vinegar * 1 tbsp clear honey * 15g butter * 1 tbsp ruby port * 1 tbsp cold water FOR THE SALAD * 25g fine green beans * Baby red chard or red sorrel leaves, washed and drained * A few red chicory leaves, trimmed, washed and sliced lengthways (see tip 2) * 2 tsp ready-made vinaigrette * 25g walnut halves, lightly toasted and broken in half * Small block of Parmesan cheese, made into thin shavings using a potato peeler METHOD FOR THE BEETROOT # Preheat the oven to 220°C/Gas 7. # Trim the beetroot stalks to around 2cm. Ingredients: 2 lb uncooked chicken breasts or chicken breast strips 10 3/4 oz. can condensed cream of mushroom soup 10 3/4 oz. can condensed cream of celery soup 10 3/4 oz. can condensed cream of chicken soup 2 cups milk 1 stick margarine (cut into chunks) 1 box Uncle Ben's long grain and wild rice (fast cooking recipe) grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese) Cooking spray, if desired Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan. Place the saucepan over low heat as you work on the chicken. Stir the soup mixture occasionally. Now, remove all extra fat, skin, and gristle from the chicken and discard it. Cut the uncooked chicken breast meat into bite-sized chunks (or cubes). When the soup mixture is hot and smooth, start assembling your casserole. Use a large oven-proof casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time.
