- Citrus Glazed Sea Scallops with Lemon Parsley Quinoa Recipe Ingredients: 1 lb sea scallops, patted dry 2 tbsp The Republic of Tea Stir Fry Tea Oil 2 shallots, minced 1/3 cup Estancia Chardonnay 1 large navel orange, zest and juice salt and pepper, to taste Optional ingredient: red pepper flakes Preparation: Heat a skillet over medium high heat for approximately three minutes until very hot. Ingredients: Pie Crust: 1 cup flour (either self-rising or all-purpose) 1/4 cup confectioner's sugar 1 stick butter or margarine, softened to room temperature In a medium to large mixing bowl, stir together 1 cup flour and 1/4 cup confectioner's sugar. Add 1 stick softened butter, and mash with a fork until the butter is broken apart. Continue to mash the butter into the flour mixture until it forms a ball. (This may take a couple of minutes, but it will eventually make a ball.) Place the ball of dough in the center of a 9-inch pie plate, and use your fingers to press the dough to cover the bottom and sides of the pie plate. Betty (using her ever-***yzing food talents) created the following recipe as an imitation of the ham served in the cafeteria, and she has continued to make it throughout her 39 (almost 40!) years of marriage. Ingredients: 1 canned ham (I used Hormel brand, 5 pounds. You may use any brand, and reduce it to 3 pounds, if desired.) 1 cup brown sugar, firmly packed 2 tablespoons prepared mustard 1 teaspoon orange juice (You may use another flavor of juice or a juice drink.) Remove the canned ham from the container and place in a crock pot on low for 6 to 8 hours. You may need to cut it into two pieces to get it to fit in the crock pot. Drop into a 350 degrees fryer or use a large frying pan with ½ inch deep canola or vegetable oil. - Balsamic Glazed Chicken BALSAMIC GLAZED CHICKEN So my oldest son Brendan is totally awesome to have around because he likes to try different foods. Okay, he's awesome for more than just that, but for my cooking habits, he totally ROCKS! He keeps me on my toes by asking me to make new things, which I am more than happy to do for him. So last summer, he had gone to dinner with his grandparents and came back saying I HAD to make balsamic glazed chicken for him. His description of this sweet, tangy, and sticky glaze did not match any recipes that I had been able to find. So I combined a few recipes from the internet, and tweaked it until I got the results he and I were both looking for. So here it is... So, take your boneless, skinless chicken breasts, and pan fry them in a little bit of olive oil. I seasoned mine with a light sprinkling of salt, pepper, and rosemary. After you flip halfway through cooking (once you get a nice golden brown on the first side) I like to "steam cook" it the remainder of the way using a lid. While that is cooking....let's make the glaze! Balsamic Glaze (makes enough for 4-6 breasts): ¼ c. balsamic vinegar 2 TBSP soy sauce 1 TBSP honey 3 TBSP brown sugar Zest from ½ lemon 1 TBSP minced garlic 1 tsp dried thyme 2 tsp dried rosemary Bring all ingredients to a boil in a small saucepan, then reduce heat to simmer (make sure heat is hot enough to continue bubbling) for approximately 5 minutes, or until reaches a syrupy consistency. - Salt Glazing Salt Crosses Salt glazing crosses in a ceramic fibre kiln at Anvil Pottery for a SALT SUNDAY event being held at the Lion Salt Works with the Bishop of Birkenhead on Sunday 17 May 2009. The kiln is packed with crosses and also with small bowls which need an extra salt firing. The gas pressure is slowly increased as the temperature rises until maximum pressure is achieved at about 900 degrees centigrade. The bungs were closed at 12.30 to reduce oxygen in the kiln. 3.5 lbs of salt were added to the kiln in opposed charging points over a 45 minute period in eight charges each side. The firing began at 10.45 salt was added at 1200 degrees begining at 13.35. The kiln was soaked at 1200 degrees for 45 minutes then crash cooled. The crosses were removed at 16.30.

- Wine Country Glazed Salmon Recipe 1/2 cup dry red wine 2 tablespoons aged Worcestershire sauce 1/2 cup dry red wine 1/4 cup Private Selection honey 1 clove of garlic, finely minced 1/2 teaspoon cracked pepper 3 tablespoons Private Selection olive oil Private Selection Mediterranean seafood grinder, to taste 1 sprig fresh rosemary, finely chopped 2 (4 - 6 ounce) Salmon 1. In a small saucepan over medium high heat, add 1 tbsp of oil and cook garlic until lightly browned and fragrant. Remove pan from heat and add wine, honey and Worcestershire and stir to combine. Allow mixture to reduce by 1/2, approximately 3 minutes, before adding cracked pepper and fresh rosemary. Set glaze aside to thicken and cool slightly. 2. Season salmon with the Private Selection seasoning. Heat remaining oil in pan over medium high heat and bronze salmon fillets for 2 to 3 minutes per side. Ingredients: 1 cup sugar ½ tablespoon ground cinnamon 2 cups pecan halves ½ tablespoon vanilla extract ¼ cup water 1 additional tablespoon water In a small mixing bowl, combine 1 cup sugar and ½ tablespoon ground cinnamon. Set aside. Also, combine ¼ cup water and ½ tablespoon vanilla extract and set aside. Place 2 cups pecan halves in the bottom of a medium-sized, heavy pot. Add the cinnamon-sugar mixture and sprinkle the vanilla-water over the top of the pecans. Stir all together with a wooden spoon. Place pot over medium heat, and boil, stirring constantly, until mixture becomes thick, about 5 to 10 minutes. When the liquid is evaporated and stirring becomes more difficult, remove the pecans from heat. Add in 1 tablespoon water. Stir pecans to coat evenly. When the liquid begins to thicken, pour the glazed nuts out onto a shallow baking pan that is lined with waxed paper. Separate the glazed pecan, using your wooden spoon. Let cool, and then lift pecans out of the crumbly sugar mixture and place them in a nice serving dish. This is great for parties, and I will also be using them in a recipe soon! Enjoy!!! --Betty

Roads and cars in the capital are covered with ice after rain that started on Saturday froze solid. At least five people have been injured by falling trees.
