Spread meringue mixture evenly over drawn rectangles; bake, uncovered, in slow oven about 45 minutes or until meringue is dry. Turn off oven; cool meringues in oven with door ajar. Meanwhile, stir chocolate and cream in small saucepan over low heat until smooth, transfer to small bowl; refrigerate until firm. Beat chocolate mixture with electric mixer about 20 seconds or until just changed in colour. Dissolve coffee powder with the boiling water in small bowl; cool 10 minutes. Beat butter in small bowl with electric mixer until pale in colour; gradually add sugar, beating until combined. Beat in coffee mixture to make mocha butter cream.
