After a drizzle of melted butter on top, the casserole is baked to perfection in the oven--just another way to make potatoes not boring! Ingredients: 4 oz. pkg of instant mashed potatoes (I used Idahoan brand--It makes 2 cups.) 2 (generous) cups boiling water 3/4 cup shredded cheddar cheese 1/2 cup sour cream 1/2 cup chopped green onion tops 5 oz. can tender chunk ham (I used Hormel brand. Be sure to cut it into chunks, before adding it in.) cooking oil spray Make the instant mashed potatoes, adding the 2 generous cups of boiling water, according to package instructions. (You may substitute 2 cups of leftover mashed potatoes, if you have them.) Add in 3/4 cup shredded Cheddar cheese, 1/2 cup sour cream, 1/2 cup chopped green onion tops, and 5 oz. of tender chunk ham, cut into chunks. Add in any ham broth that may be in the can. Mix thoroughly, and then pour into a medium oven-proof baking dish that has been sprayed with cooking oil. Bake at 375 degrees for 25 minutes. Serve while hot. Cook over low heat for about 5 to 6 minutes, until al dente (chewy, not mushy). While your pasta is cooking, prepare your sauted carrots and celery, and your Velveeta/Parmesan cheese sauce. It's great for company, but when I make it just for my family there is very little (if any) left! Ingredients: 1 1/2 pounds uncooked boneless sirloin steak (1-inch thick) (2) 10 3/4-oz. cans condensed cream of mushroom soup 10 3/4-oz. can condensed cream of celery soup (2) 10 3/4-oz. cans beef broth 2 cups milk 3/4 stick (3-oz.) butter, melted (2) 6.2-oz. boxes Uncle Ben's long grain and wild rice (fast cooking recipe) large can French fried onions cooking oil spray, if desired Melt 3/4 stick (3-oz.) butter in a very large pot or Dutch oven. Add 2 cups milk, the five cans of soup, and 2 boxes of Uncle Ben's fast cooking long grain and wild rice, including the herb and seasoning packets that come with the rice. Stir well. Now, remove all extra fat and gristle from the sirloin steak and discard it. Cut the uncooked steak into 1-inch cubes and add the sirloin steak cubes to the soup-rice mixture. Next, ladle the steak and soup-rice mixture into a *very* large casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time. Spray the baking dish with cooking spray, if desired.   • Ravioli Casserole Found this one in Taste of Home magazine This could easily be doubled and baked in an 9x13" pan. 1 package of frozen cheese or meat ravioli (I used a 16 oz package) You will need anywhere from 12 to 16 oz of ravioli. You could also use fresh ravioli. (The original recipe asked for a 25oz package and the recipe in the video is scaled down) Cook ravioli according to package directions (drain and set aside) Sauce: 1/8 cup butter 1/8 cup flour 1/8 tsp nutmeg 1/8 tsp salt 1 cup milk 1/8 cup dry white wine or chicken (or vegetable) broth 1/4 to 1/2 cup minced fresh basil (you can use a couple of teaspoons of dried basil, but the flavour isn't as good) 1 1/2 cup shredded mozzarella cheese divided about 1/2 cup grated parmesan cheese divided 1 1/2 cups of pasta sauce In large saucepan over medium high heat, melt the butter and then add the flour stirring until smooth and bubbly. Add the milk gradually, stirring it in until smooth. Add the nutmeg, salt and wine (or broth) and cook until thickened and bubbly. Remove from heat and add the basil and 1/2 cup mozzarella and half of the parmesan. Stir together until cheese is melted. Toss the cooked ravioli with the white sauce mixture and transfer to a greased 8x11" baking dish. Top with 1/2 cup mozzarella and a sprinkling of parmesan. Top with pasta sauce and sprinkle with remaining cheese. Bake at 375F for 30 minutes until golden on the top and bubbly all over. Let stand 10 minutes before serving. Makes 4 generous servings.

This recipe came from my good friend, Lynn, on YouTube, and it is heavenly! It is a blend of mashed potatoes, onion, egg, cream cheese, and seasonings, baked in the oven and topped with French fried onion rings. Absolutely the best! Ingredients: 24 oz. tub of Bob Evans Original Mashed Potatoes—or you can make your own small onion, finely chopped 1 egg, well beaten 3 oz. package cream cheese 1 tablespoon all purpose flour salt and pepper to taste small can Durkee's French Fried Onions (I used French's brand.) Using an electric mixer, mix all ingredients except the French fried onions. Spoon mixture into a medium-sized greased baking dish. Bake at 325 degrees for 30 minutes. During the last few minutes of baking, add a can of French fried onions, and let it get crisp in the oven for the last few minutes. Remove from oven and serve immediately.   • Cheesy Broccoli And Rice Casserole Ingredients: 1 can of cream of mushroom (26oz) 2 cups of brown rice 5 cups of broccoli (chopped) 3/4 cup fat free mozzarella 3/4 cup of 2% sharp cheddar 1 bunch of chives (chopped up) 1 lb of yellow onion 2 tbs of butter salt and pepper to taste Mix cream of mushroom, rice, chopped broccoli, chopped chives and fat free mozzarrella in the casserole dish until well mixed. Sprinkle the 2% sharp cheddar on top of entire casserole. Sprinkle the carmelized onions evenly on top of casserole. Bake at 350 degrees for 35 minutes and then let it cool for 15 minutes before eating. Carmelized onions: Melt the 2tbs of butter in a pan and add the sliced onions. Add salt and pepper if you want to. Cook on medium to high setting turning the onions every 3 minutes or so until all the onions are carmelized. This will usually take 20 minutes or so. ENJOY!!!

Ingredients: 2 lb uncooked chicken breasts or chicken breast strips 10 3/4 oz. can condensed cream of mushroom soup 10 3/4 oz. can condensed cream of celery soup 10 3/4 oz. can condensed cream of chicken soup 2 cups milk 1 stick margarine (cut into chunks) 1 box Uncle Ben's long grain and wild rice (fast cooking recipe) grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese) Cooking spray, if desired Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan. Place the saucepan over low heat as you work on the chicken. Stir the soup mixture occasionally. Now, remove all extra fat, skin, and gristle from the chicken and discard it. Cut the uncooked chicken breast meat into bite-sized chunks (or cubes). When the soup mixture is hot and smooth, start assembling your casserole. Use a large oven-proof casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time. Spray the baking dish with cooking spray, if desired. This is not necessary, because there is enough fat in the sauce from the margarine, but it might make serving a little easier. This is also really good to make when you have overnight guests. You can make it the day before, refrigerate, and then bake in the morning. 8 eggs, slightly beaten 6 slices white bread, cubed 1 lb. browned breakfast sausage 2 cups milk 1 cup grated cheddar cheese 1 tsp. salt 1 tsp. pepper Cube bread and place in a 9 x 13" baking dish that has been sprayed with cooking spray. Brown and drain the sausage. Whisk the eggs and then add the milk, cheese, salt, pepper, and sausage. Pour over the bread and make sure that the bread gets soaked with the mixture. You may have to even out the sausage and cheese on the top. Cover and refrigerate overnight or 12 hours. Bake in a preheated 350° oven for 40 minutes. Serve hot. If you want to make this fat free or lower fat you could try to use a turkey sausage, skim milk, egg beaters, and a no fat cheese. I have never made it that way, but it would probably work.
