This is a nice, creamy blend of chopped broccoli, eggs, mayonnaise, onions, Cheddar cheese, and cream soup, topped with cracker crumbs and baked to perfection! Ingredients: 16 oz. (approximately) frozen chopped broccoli 2 eggs, well beaten 1 cup mayonnaise 2 teaspoons minced onion 1 cup shredded sharp Cheddar cheese 10 ¾-oz. can condensed cream of celery soup (You may substitute any cream soup you like.) ground black pepper, to taste cooking oil spray ½ to 1 inner pack of Ritz crackers, crushed into crumbs Cook broccoli in 1 cup boiling water 5 minutes; drain. Add 2 well-beaten eggs, 1 cup mayonnaise, 2 teaspoons minced onion, 1 cup shredded Cheddar cheese, a 10 ¾-oz. can cream of celery soup, and ground black pepper, to taste. Pour into an oven-proof casserole dish that has been sprayed with cooking oil. Cover evenly with a thin layer of crushed Ritz cracker crumbs. Pepper the top of the casserole, to taste. Here is the recipe: Sweet potato casserole • Preheat oven to 325 degrees Crust • Two sticks of butter softened-microwave for 10 seconds • 3 egg yolks • 1 tsp. nutmeg • 1/4 cup evaporated milk • 1 cup sugar • 2 cups of flour • 1 tsp baking powder • Cream butter and sugar until fluffy with mixer then add egg yolks . Mix flour with nutmeg and baking powder in a separate container then put powdered mixture into the butter/sugar mixture . Alternate adding the powder and the milk as you mix with the mixer. • Place around the sides and bottom of an oblong pan. Please make sure to cover the entire pan. It can be metal or glass- 9x13 pan or casserole dish. Sit to the side. Filling • 1 large can sweet potatoes 40 oz. can • 2 to 2.5 cups sugar to taste • 2 sticks of butter room temperature • 3 tsp. nutmeg • 2 tsp. vanilla flavoring • 1 ½ cups of evaporated milk • 3 eggs beaten • Cook potatoes separately until they are tender. Cook on the stove or place in the microwave for 5 minutes • Beat the potatoes to remove the strings. The strings will stick to the beater. Rinse the beater off. • Add sugar and butter to the sweet potatoes and beat until lumps disappear • Add nutmeg, milk, vanilla, and eggs to the potato mixture .   • Ravioli Casserole Found this one in Taste of Home magazine This could easily be doubled and baked in an 9x13" pan. 1 package of frozen cheese or meat ravioli (I used a 16 oz package) You will need anywhere from 12 to 16 oz of ravioli. You could also use fresh ravioli. (The original recipe asked for a 25oz package and the recipe in the video is scaled down) Cook ravioli according to package directions (drain and set aside) Sauce: 1/8 cup butter 1/8 cup flour 1/8 tsp nutmeg 1/8 tsp salt 1 cup milk 1/8 cup dry white wine or chicken (or vegetable) broth 1/4 to 1/2 cup minced fresh basil (you can use a couple of teaspoons of dried basil, but the flavour isn't as good) 1 1/2 cup shredded mozzarella cheese divided about 1/2 cup grated parmesan cheese divided 1 1/2 cups of pasta sauce In large saucepan over medium high heat, melt the butter and then add the flour stirring until smooth and bubbly. Add the milk gradually, stirring it in until smooth. Add the nutmeg, salt and wine (or broth) and cook until thickened and bubbly. Remove from heat and add the basil and 1/2 cup mozzarella and half of the parmesan. Stir together until cheese is melted. Toss the cooked ravioli with the white sauce mixture and transfer to a greased 8x11" baking dish. Top with 1/2 cup mozzarella and a sprinkling of parmesan. Top with pasta sauce and sprinkle with remaining cheese. Bake at 375F for 30 minutes until golden on the top and bubbly all over. Let stand 10 minutes before serving. Makes 4 generous servings.

It is a large casserole of Tater Tots, topped with a generous mixture of sour cream, mushroom soup, Cheddar cheese, and green onion, baked in the oven. The finishing touch is a can of potato sticks for a crunchy, potato-y taste! Ingredients: 32 oz. package frozen Tater Tots (These are pre-cooked, formed potato nuggets.) 16 oz. container sour cream 1 cup shredded Cheddar cheese 10.75 oz. can condensed cream of mushroom soup ¾ cup sliced green onions 1 can of potato sticks cooking oil spray (for greasing baking dish—you may use butter or oil.) Spray a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray (or grease with butter or oil). Arrange Tater Tots in evenly in the bottom of the prepared baking dish. In a large mixing bowl, combine 16 oz. sour cream, 1 cup shredded Cheddar cheese, a 10.75 oz. can cream of mushroom soup, and ¾ cup sliced green onions. Stir until well blended. Pour mixture over the Tater Tots. Bake at 350 degrees for 45 minutes. Sprinkle a can of potato sticks over the top of the casserole, and cook for an additional 5 minutes. Remove from the oven, and serve while hot! This casserole is a favorite around here. It is very simple to make, and goes with just about anything. It is very tasty!

For this recipe, you'll need: 5 extra large eggs or 6 large eggs 2 cups whole milk 1 cup heavy cream 1 tsp. vanilla 1-2 Tbsp. lemon curd - this is optional, but it gives this french toast casserole incredible flavor 1 loaf of challah bread Start by buttering a 9 x 13 baking dish. Crack the eggs into a large bowl. Add the milk, cream, vanilla and lemon curd. Whisk them all together. Now start tearing piece of the challah off and put them in the buttered baking dish. You don't have to make it perfect - just tear it into bite-sized pieces. Now pour the egg mixture over the bread, and you can push it down with a fork or spoon to make sure the bread soaks up all the egg custard goodness. Cover, and refrigerate overnight. OK, the next day, you can make your topping. You'll need: 6 Tbsp. butter 1/3 cup brown sugar 1/3 cup flour Cut the butter into cubes, and add the brown sugar and flour. I didn't mention it in the video, but 1 teaspoon of cinnamon would be a nice thing to add here. Now this is a pastry blender - I know - a lot less impressive in reality than it sounds - you can use that to make the crumb topping. Like this. But you don't need a pastry blender.   • Betty's Beefy Italian Casserole Recipe In this video, Betty makes a splendid Beefy Italian Casserole. If you are wanting to get away from the traditional Christmas and New Years foods, this is a casserole that has the taste of lasagna, but is much less trouble! Ingredients: 4 oz. uncooked wide egg noodles 1 teaspoon salt 1 pound lean ground beef 2 cups (16 oz.) Italian sauce 8 oz. cream cheese, cubed, and softened to room temperature 1 cup cottage cheese 1/2 cup sour cream 3/4 cup finely shredded Parmesan cheese Cook 4 oz. noodles in a medium to large pot, which has been filled half-way with water and seasoned with 1 teaspoon salt. Cook for about 8 minutes, or until al dente (chewy, not mushy). Drain, and place noodles in a greased 11-inch by 7-inch baking dish. Set aside. Meanwhile, brown 1 pound ground beef in a large skillet, stirring until it is crumbly and no longer pink. Skim off any excess fat and discard. Stir in 2 cups of Italian sauce, and set aside. In a medium-sized bowl, combine 8 oz. cream cheese, 1 cup cottage cheese, and 1/2 cup sour cream. Spread mixture over noodles in baking dish. Spoon beef mixture over cream cheese mixture. Sprinkle with 3/4 cup shredded Parmesan cheese. Bake in a 350 degree oven for 30 to 35 minutes, or until casserole is bubbly and cheese on top is beginning to brown. Serve immediately. (I used 1 teaspoon salt in preparing the noodles.) Drain noodles and return them the pot where they were cooked. Ingredients: 2 lb uncooked chicken breasts or chicken breast strips 10 3/4 oz. can condensed cream of mushroom soup 10 3/4 oz. can condensed cream of celery soup 10 3/4 oz. can condensed cream of chicken soup 2 cups milk 1 stick margarine (cut into chunks) 1 box Uncle Ben's long grain and wild rice (fast cooking recipe) grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese) Cooking spray, if desired Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan. Place the saucepan over low heat as you work on the chicken. Stir the soup mixture occasionally. Now, remove all extra fat, skin, and gristle from the chicken and discard it. Cut the uncooked chicken breast meat into bite-sized chunks (or cubes). When the soup mixture is hot and smooth, start assembling your casserole. Use a large oven-proof casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time. It was delicious! 1 1/4 teaspoons salt 1/2 teaspoon pumpkin pie spice 3/4 teaspoon ground allspice 3/4 teaspoon dried thyme leaves 1/4 teaspoon ground red pepper (cayenne) 6 boneless skinless chicken thighs 1 tablespoon vegetable oil 1 can (15 oz) black beans, drained, rinsed 1 large sweet potato (1 lb), peeled, cubed (3 cups) 1/4 cup honey 1/4 cup lime juice 2 teaspoons cornstarch 2 tablespoons sliced green onions (2 medium) Heat oven to 375°F. Spray 8-inch square (2-quart) baking dish with cooking spray. In small bowl, mix salt, pumpkin pie spice, allspice, thyme and red pepper. Rub mixture on all sides of chicken. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 2 to 3 minutes per side, until brown. In baking dish, layer beans and sweet potato. Top with browned chicken. In small bowl, mix honey, lime juice and cornstarch; add to skillet. Heat to boiling, stirring constantly. Pour over chicken in baking dish. Ingredients: 10.75 oz. can condensed cream of mushroom soup ½ cup milk Dash ground black pepper 4 cups cooked cut green beans (I used two 15 oz. cans, drained) ¼ cup red bell pepper, chopped 1 1/3 cups French fried onions, divided (These come in a can, or you can make your own.) ¾ cup shredded sharp Cheddar cheese, divided In a large bowl, stir 10.75 oz. cream of mushroom soup, ½ cup milk, dash black pepper, 2 cans drained green beans, ¼ cup chopped red bell pepper, 2/3 cup French fried onions, and ½ cup Cheddar cheese. Add 1 tablespoon salt, and bring the water to a full boil. Add the 12 oz. of pasta, and bring to a boil. Cook for 7 to 10 minutes, until al dente (chewy--not mushy). While the pasta is cooking, prepare your casserole cheese sauce. Melt 2 tablespoons butter in a saucepan on the stove. Remove from heat and stir in 1/4 cup flour an stir vigorously, until the two are blended into a roux. Add 12 oz. (1 1/2 cups) grated Parmesan cheese, 1 1/2 cups milk (I use skim milk), and 1/4 teaspoon salt. Now cook and stir continuously for a minute or two, and then occasionally. The sauce should be thick and smooth about the same time that the pasta is cooked. Drain the pasta in a colander in the sink and place the pasta back in the pot.
