Tie the thyme and rosemary sprigs together with string and add them to the pan along with the orange zest, cinnamon, bay leaves, star anise, pepper and salt. Cut onion in half top to bottom, slice into 3/8-inch half rings. ４) Parboil green beans, and cut into 1-inch lengths. ５) Heat oil in a skilet, stir-fry beef lightly, Add potatoes, ito-konnyaku, and onion, and continue stir-frying. ６) Add dashi, cook umtil potatoes are tender,and add seasonings. Cook over medium heat for 15 minutes. ７) Serve in a bowl with green beans sprinkled on top. ■Dashi (Bashic Stock)■ ◆INGREDIENTS (Makes 4 US cups) 4 UScups water 4-inch (2/3 oz) konbu kelp 1 handful (2/3-1 oz) dried bonito flakes ◆DIRECTIONS １) Wipe konbu kelp lightly with awell-wrung damp cloth to clean. ２) Place water and konbu in a soup pot over medium heat.
