  • Betty's Blueberry Streusel Muffins In this video, Betty demonstrates how to make Blueberry Streusel Muffins. These are Blueberry muffins with a gorgeous crunchy brown sugar topping. For plain blueberry muffins, please see my earlier version of blueberry muffins in bettyskitchen. Ingredients: 2 cups self-rising flour 1/3 cup sugar 1 egg, well beaten ¾ cup milk ¼ cup vegetable oil 1 cup fresh blueberries ¼ cup light brown sugar 2 tablespoons self-rising flour 1 tablespoon butter cooking oil spray In a large mixing bowl, combine 2 cups self-rising flour and 1/3 cup sugar. Measure out 2 tablespoons of this mixture, place it in a small bowl, and set it aside. Make a well in the center of the remaining flour-sugar mixture. In a medium mixing bowl, combine 1 well-beaten egg, ¾ cup milk, and ¼ cup vegetable oil. Add liquid mixture to the dry mixture. Stir just until dry ingredients are moistened. Do not over-stir. Combine 1 cup fresh blueberries with reserved 2 tablespoons of flour-sugar mixture. Toss to coat. Fold coated blueberries gently into muffin batter. Spray 12 muffin tins with cooking oil spray. Spoon batter into muffin tins, filling each ¾-full. In a small bowl, combine ¼ cup brown sugar and 2 tablespoons flour. Cut in 1 tablespoon butter, using a pastry blender or fork. Mixture should be crumbly. Spoon mixture evenly over the batter in the 12 muffin tins. Bake at 400 degrees for approximately 18 minutes, or until lightly browned. They are just the right texture and flavor--not too sweet, because the fresh blueberries take care of that! When done, a toothpick inserted into the center will come out clean. Note: If you prefer not to spray the muffin tins, place a paper baking cup liner for each muffin. These are really great muffins--enjoyable for everyday, but elegant enough for company!

  • Blueberry Streusel Cheesecake What You Need 1-1/2 cups flour 1 cup plus 6 Tbsp. sugar, divided 1/2 tsp. cinnamon 3/4 cup butter 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened 2 tsp. vanilla 4 eggs 2 cups fresh blueberries Make It HEAT oven to 325°F. MIX flour, 6 Tbsp. sugar and cinnamon in medium bowl. Cut in cold butter with pastry blender or two knives until mixture resembles coarse crumbs. Reserve 1/2 cup. Press remaining crumbs firmly onto bottom of pan. Bake 25 min. or until edge is lightly browned. BEAT cream cheese, 1 cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, beating on low speed after each addition just until blended. Pour over crust; top with 2 cups of the blueberries. Sprinkle with reserved crumb mixture. BAKE 1 hour 15 min. to 1 hour 20 min. or until center is almost set. Run small knife or spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate at least 4 hours before serving. Store leftover cheesecake in refrigerator.

This cobbler is made of fresh blueberries, sugar, flour, water, lemon juice and vanilla. The process of making it into a cobbler is speeded up by using pre-made pie crust dough, allowing for an attractive lattice top! Ingredients: 3 pints fresh blueberries 1 cup sugar 1/3 cup all-purpose or self-rising flour ¼ cup water 1 ½ tablespoons lemon juice 1 teaspoon vanilla extract 15-oz. package refrigerated pie crusts (made and rolled—or use your own homemade pie crust dough) cooking oil spray vanilla ice cream In a medium to large pot, mix 3 cups fresh blue berries, 1 cup sugar, 1/3 cup flour, ¼ cup water, 1 ½ tablespoons lemon juice, and 1 teaspoon vanilla extract. Stir together and place over low to medium heat. Bring the mixture to a boil, and then reduce the heat to low. Cook 10 minutes, stirring occasionally. Spoon half of blueberry mixture into an 11-inch by 7-inch baking dish that has been sprayed with cooking oil spray. Roll 1 pie crust 10 1/8-inch thickness on a lightly floured surface, and cut dough into an 11-inch by 7-inch rectangle. Place the rectangle of dough of top of the blueberry mixture. Bake at 450 degrees for about 10 minutes, until lightly brown. Let the remaining half of the blueberry mixture cool to room temperature for ease in making a lattice top crust. Blueberry Buttermilk Pancakes 1 1/4 cups all-purpose unbleached flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1 teaspoon sugar 1 egg, at room temperature, separated 1 1/2 cups lowfat buttermilk, room temperature 1 tablespoon unsalted butter, melted and cooled 3/4 cup fresh blueberries Nonstick cooking spray Sift together flour, baking powder, baking soda, and sugar in a large bowl. In a medium bowl, whisk together buttermilk, egg yolk, and butter. Using a whisk, whip egg white in a separate bowl until soft peaks form. Add wet ingredients to dry and incorporate with a few swift strokes. Batter will be lumpy, so dont over mix. Gently fold in egg whites and blueberries with a spatula. Preheat a nonstick skillet over medium heat. When pan is hot, spray with cooking spray if desired. Using up to 1/4 cup batter for each pancake, drop in 4 pancakes, spaced apart.
