Super easy, and wicked cheap: it cost me about $5 to make this one. You'll need: 1 bunch yellow or chiogga (candy-striped) beets Juice of 1 lime 2 sprigs mint 1 tsp grated fresh ginger Extra virgin olive oil 1 big blood orange or navel orange Goat cheese (optional) 1) Wash and scrub beets. Dry, cut off stalks. Wrap in an aluminium foil package, roast for 45 minutes for 45 minutes, until a knife goes through them easily. Set aside to cool, and peel. 2) In a bowl, combine lime juice, grated ginger, and mint leaves (cut into ribbons). Set aside as you slice beets into wedges. 3) Whisk enough olive oil into the lime juice mixture to make a dressing to the consistency you prefer. Season with salt and pepper. 4) Cut top and bottom off blood orange. Cut off peel. Slice between white segment walls, and drop segments into bowl. Squeeze orange juice out of remaining pith and membranes over the bowl as well. Toss gently and serve! (You may also like to serve with some creamy goat cheese, over a bed of arugula!)   • Betty's Orange-Glazed Beets Recipe In this video, Betty demonstrates how to make a great side dish for lunch or dinner—Bettys Orange Glazed Beets. The beets are glazed with a paste made of brown sugar, butter, flour, and orange juice. The combination of sweet and tart with the beets is fantastic! Beets are a natural source of beta carotene, a component that promotes good health and prevents disease. Ingredients: 16 oz. can sliced beets 1 tablespoon butter or margarine 2 tablespoons flour 2 tablespoons brown sugar ½ cup orange juice Heat 16 oz. beets in their own liquid. In a small saucepan, melt 1 tablespoon butter. Remove from heat. Add 2 tablespoons flour, 2 tablespoons brown sugar, and ½ cup orange juice. Return to heat, stirring constantly until thickened. Drain heated beets. Add sauce to beets, and stir gently to coat. Pour into a nice serving dish. These beets are an excellent accompaniment to almost any meat entree. Happy beet-eating!

  • Oven Roasted Beets, Thanksgiving "Oven Roasted Beets" Gently wash 3-5 beets & cut off their greens (save & cook later for another dish). An ECO-Friendly way to roast beets is to simply coat the beets with oil & bake in the oven. If you would like to prevent staining your hands with red beet juice then coat your hands in oil too. -OR- another option is to: Wrap the beets in foil & bake at 450º for approx: 1 hour (until tender) Remove beets from oven & let cool, gently pull off skin then slice. Toss with a homemade vinaigrette, raw walnuts & cheese of your choice. Now it's ready to add to a nice salad or serve solo as a side dish. ***Note: I edited out my discussion about "Parmigiano-Reggiano", generally called parmesan in America. It's rare that I buy it already grated. In my opinion, the best way to serve it with beets is to use some sort of slicer & shave off really thin, but large pieces right before serving. When I shot this video, I had just used my entire wedge of Parmigiano-Reggiano, in another recipe. Granny's Vinaigrette: 1/2 cup balsamic vinegar 1/2 cup olive oil 3 tablespoons Sesame Oil (optional) 3 tablespoons Honey (local, Raw is best) Black pepper to taste 3 tablespoons spicy or dijon mustard 2 tablespoons tamari (or salt) Combine in a jar, then, shake & serve. But this tasty root vegetable also comes in other colors. There are pink, yellow and white beets, and beets with circles of red and white inside. These are known as candy cane or candy stripe beets. Beets are high in nutrients including folate, iron and fiber. They can be eaten fresh or frozen, canned or pickled. And not just the root but also the tops can be eaten. The leaves make good salads when the plants are young, and the greens can be cooked when the plants are older. Beets do not require much work to grow. They like cool temperatures, between six*** and eigh*** degrees Celsius. They grow best in full sun and in loose soil that is not too wet. Remove stones from the soil while preparing the ground. And test the soil before adding lime and fertilizer. Some experts say the best fertilizers for beets are low in nitrogen. Beets need the acidity level in the soil to be six to seven and a half. Beet seeds can be planted as soon as the soil is able to be worked at the start of the growing season. Planting them every two or three weeks will provide a continuous harvest into the fall. Cindy Haynes at Iowa State University suggests planting the seeds one and one-quarter centimeters deep. They should be planted in rows that are spaced thirty to forty-six centimeters apart. The British researchers who conducted the study say the findings add even more weight to the importance of eating a diet rich in fruits and vegetables. That's because beets (known as beetroot in Britain) are loaded with the nutrient nitrate. Spinach, lettuce, and other green, leafy vegetables also have high levels of nitrate. Previous studies have shown that eating a diet high in fruits and vegetables lowers blood pressure. Antioxidants often get the credit, but several recent studies have suggested that nitrates may play a much bigger role. How nitrates work to lower blood pressure has been more of mystery. How Nitrates May Lower Blood Pressure In the study, 14 healthy volunteers drank 500 milliliters (2 cups) of Planet Organic beet juice or water within 30 minutes. The researchers checked the participants' blood pressure every 15 minutes one hour before they drank the juice and every 15 minutes three hours after drinking the beet juice. They also checked every hour to six hours and then at 24 hours after they drank the beet juice.
