It consists of individual chicken breast servings that are flavored with Parmesan cheese and parsley. Also, it is baked in the oven, so it is *very* easy to do! A favorite with everyone! Ingredients: 2 1/2 pounds uncooked chicken breasts, cut to individual serving sizes meat tenderizer, to taste 1 inner packet of Ritz crackers, finely crushed 3/4 cup grated Parmesan cheese 2 tablespoons fresh chopped parsley 1 stick of butter or margarine, melted cooking oil spray fresh ground black pepper, to taste Use kitchen shears to remove any excess fat from your chicken breasts. Now, sprinkle them lightly with meat tenderizer, top and bottom. Next, make your coating: In a ziplock plastic bag, empty 1 inner packet of Ritz crackers, close the bag, and use a dough roller to crush the crackers until they are very fine. Open the bag and add in 3/4 cup grated Parmesan cheese and 2 tablespoons of fresh chopped parsley. Close the bag, and shake vigorously to complete your coating mixture. Spray a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray. Take one chicken breast at a time and dip it into the melted butter or margarine, then into the coating mixture, and then place it in your baking dish. If there is any coating mixture left over, sprinkle it on top of your coated chicken breasts. If there is any melted butter or margarine left over, drizzle it over the top. Place ...

  • Betty's No-Bake Chocolate Oatmeal Cookie Squares Recipe In this video, Betty demonstrates how to make No-Bake Chocolate Oatmeal Cookie Squares. This was a special request from her son-in-law, Chris, who preferred these cookies to the traditional birthday cake for his birthday celebration! They are dark chocolate flavor, and contain peanut butter and oatmeal, making them more nutritious than the average cookie. Ingredients: ½ cup milk ¼ cup butter or margarine, melted ½ cup cocoa 2 cups sugar 1 teaspoon vanilla extract ½ cup smooth or chunky peanut butter 2 ½ cups quick-cooking oats Place ½ cup milk, ¼ cup melted butter or margarine, ½ cup cocoa, and 2 cups sugar into a saucepan and bring to a boil over medium heat, stirring to dissolve sugar. Boil for 1 minute, stirring constantly. Remove from heat, and stir in 1 teaspoon vanilla extract, ½ cup peanut butter, and 2 ½ cups quick-cooking oats. You may finish these cookies up in a couple of ways. 1) Drop by teaspoonfuls onto waxed paper, and let set up for about ½ hour or 2) Pour mixture into a large (13-inch by 9-inch by 2-inch) greased pan and cool, then cut into equally-sized squares. This is a traditional cookie recipe in my part of the country. These cookies are great as snacks for children, and are great as lunchbox items, but big kids like them, too!

Ingredients: 1 pound hot (or mild) Italian sausage, with casings removed ½ pound lean ground beef 1 medium onion, chopped 1 teaspoon salt (for cooking pasta) a splash of extra virgin olive oil (for cooking pasta) 12 oz. penne rigate, cooked according to package directions (You may use any type of pasta that you like.) 26 oz. jar Italian sauce (I used Prego.) 8 oz. can tomato sauce 12 oz. sliced mozzarella cheese (or more, to taste) ½ cup grated Parmesan cheese cooking oil spray In a deep skillet, cook 1 pound Italian sausage, ½ pound ground beef, and 1 medium chopped onion, stirring constantly until meat is browned. Drain meat mixture. Cook 12 oz. penne rigate pasta, according to package directions. (I added 1 teaspoon salt and a splash of olive oil, and cooked the pasta for about 8 minutes.) Drain pasta. In your deep skillet, combine browned meat mixture, cooked pasta, a 26 oz. jar Italian sauce, and an 8 oz. can of tomato sauce. Stir until thoroughly combined. Spoon half of meat mixture into a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil. Top with half of the sliced mozzarella cheese and half of the grated Parmesan cheese. Line 2 heavy large baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside. Using an electric mixer, beat the butter and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. Stir in the toffee, hazelnuts, and chocolate chips. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1-inch apart (do not flatten dough). Bake until the cookies are golden (cookies will flatten slightly), about 15 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely. Keep covered with water until ready to use. When ready to assemble recipe, dry the potatoes with a paper towel. Cut potatoes into thin slices, but not all the way through.   • Betty's Oven Baked Potato Wedges In this video, Betty demonstrates how to make her terrific Oven Baked Potato Wedges. These are wedges cut from baked potatoes, dipped in melted butter, and then crisped in the oven. Delicious! Ingredients: 4 to 6 medium baking potatoes, washed and dried ½ to 1 stick butter, melted (I used 1 stick butter in the video, but I think the recipe will be better with only about ½ stick butter—and less fat calories, too!) sea salt, to taste freshly ground black peppercorns, to taste Wrap 4 to 6 medium baking potatoes individually in aluminum foil. Bake in 400-degree oven for approximately 1 hour (until almost done, but still a little firm). Remove potatoes from oven and from foil. Let cool until they are easy to handle. Divide each baked potato in half and then cut each half into 3 wedges. Dip in melted butter, and place in an oven-proof baking dish in a single layer, if possible. Grind sea salt over the top of all the potato wedges, and then grind black peppercorns over the top, to taste. Place the dish of potato wedges back in the oven at 350 degrees for about 10 minutes. When crisp and tender, remove from oven. (I turned my oven to broil for the last minute or so, in order to get the potato wedges crispier.) Serve immediately, while hot.   • Betty's Baked Chicken Tenders with Dipping Sauce Recipe In this video, Betty demonstrates how to make Baked Chicken Tenders with Dipping Sauce. This is a low fat alternative to fried chicken tenders, but the chicken is still crispy, crunchy, and tasty! Ingredients: 1 to 2 pounds boneless, skinless chicken tenders salt, to taste ground black pepper, to taste 3 egg whites, beaten until frothy 2 cups panko bread crumbs ½ cup fat-free or light Italian salad dressing ½ cup apricot preserves (preferably with no sugar added) cooking oil spray Use kitchen shears to cut 1 to 2 pounds chicken strips into desired serving pieces. Season with salt and ground black pepper, and set aside. Place 2 cups panko bread crumbs in a small shallow dish, and season with salt and pepper, and set aside. Beat 3 egg whites in a small mixing bowl. Dip chicken tenders into the beaten egg whites, and toss them in the panko crumbs. Place the breaded chicken tenders on a baking sheet that has been sprayed with cooking oil. Bake at 450 degrees for 10 to 12 minutes until the crumbs are browned and the chicken is firm. (I baked mine for 10 minutes, and then turned them and baked them an additional 2 minutes. You may want to reduce the heat to 400 degrees and increase your baking time, depending on your oven.) While the chicken tenders are baking, prepare your dipping sauce: Place ½ cup Italian salad dressing and ½ cup apricot preserves in a small pot. Ingredients: 2 large Idaho baking potatoes, washed and dried cooking spray sea salt 1/2 stick butter or margarine at room temperature 1/2 cup sour cream 1 cup shredded Cheddar cheese 1/4 cup snipped green onions Heat the oven to 400 degrees. Cut off an appropriate length of aluminum foil for wrapping each potato. Place each potato on its piece of foil, spray with cooking spray, and grind some sea salt all over the potatoes. Wrap each potato in its aluminum foil and place in the 400 degree oven to bake for 1 hour and 15 minutes. While the potatoes are baking, prepare the following topping. In a medium-sized bowl, mix 1/2 stick butter or margarine (room temperature), 1/2 cup sour cream and 1 cup shredded Cheddar cheese. After mixing these three ingredients, add the 1/4 cup snipped green onions and blend in lightly. Remove the 2 potatoes from the oven, test for doneness by rolling them in your hand (with a potholder). They should feel slightly soft. Remove the foil covering them, and transfer each potato to its serving dish. Salt and pepper the potatoes to taste. Place a generous amount of topping on the top of each potato. Eat immediately while hot and delicious!
