Ingredients: 6 oz. uncooked pasta (I used bow-tie pasta.) 1/2 medium, to large pot of water, salted with 1 tablespoon salt 2 tablespoons butter 1/4 cup flour 1 1/2 cups grated Parmesan cheese 1 1/2 cups milk for cheese sauce (I use skim milk.) 1/4 teaspoon salt (2) 6-oz. cans chunk light tuna in water, drained 1 additional cup milk (while blending casserole together) 1/2 cup frozen green peas cooking spray Fill a medium to large pot one-half full of water. Add 1 tablespoon salt, and bring the water to a full boil. Add the 12 oz. of pasta, and bring to a boil. Cook for 7 to 10 minutes, until al dente (chewy--not mushy). While the pasta is cooking, prepare your casserole cheese sauce. Melt 2 tablespoons butter in a saucepan on the stove. Remove from heat and stir in 1/4 cup flour an stir vigorously, until the two are blended into a roux. Add 12 oz. (1 1/2 cups) grated Parmesan cheese, 1 1/2 cups milk (I use skim milk), and 1/4 teaspoon salt. Now cook and stir continuously for a minute or two, and then occasionally. The sauce should be thick and smooth about the same time that the pasta is cooked. Drain the pasta in a colander in the sink and place the pasta back in the pot. Drain meat mixture. Cook 12 oz. penne rigate pasta, according to package directions. (I added 1 teaspoon salt and a splash of olive oil, and cooked the pasta for about 8 minutes.) Drain pasta. In your deep skillet, combine browned meat mixture, cooked pasta, a 26 oz. jar Italian sauce, and an 8 oz. can of tomato sauce. Stir until thoroughly combined. These were inspired by a trip my husband, Rick, and I made to Acres of Land Winery in Richmond, Kentucky recently, and I ordered Potato Skins for lunch at their restaurant. These are scooped-out baked potatoes with a delightful topping of Cheddar cheese, crumbled crisp bacon, and chives. Yum! Ingredients (for 8 potato skins—adjust the recipe for the number of potato skins you want.): 2 medium-sized baking potatoes (I used Idaho potatoes) ½ cup finely shredded Cheddar cheese 2 slices crisp cooked bacon, crumbled 1 tablespoon fresh snipped chives (If you use dried chives, use only 1 teaspoon.) salt and pepper, to taste cooking oil spray sour cream (for accompaniment) Thoroughly wash 2 baking potatoes, and pat them dry with paper toweling. Spray an appropriately-sized glass dish, and also spray the potatoes and place them in the dish. Bake at 375 degrees for about 1 hour, or until done. (You can use a potholder to squeeze the potatoes, and they will be soft inside when they are done.) Remove the baked potatoes from the oven, and let them cool to the point where you can handle them.   • Betty's Oven Baked Potato Wedges In this video, Betty demonstrates how to make her terrific Oven Baked Potato Wedges. These are wedges cut from baked potatoes, dipped in melted butter, and then crisped in the oven. Delicious! Ingredients: 4 to 6 medium baking potatoes, washed and dried ½ to 1 stick butter, melted (I used 1 stick butter in the video, but I think the recipe will be better with only about ½ stick butter—and less fat calories, too!) sea salt, to taste freshly ground black peppercorns, to taste Wrap 4 to 6 medium baking potatoes individually in aluminum foil. Bake in 400-degree oven for approximately 1 hour (until almost done, but still a little firm). Remove potatoes from oven and from foil. Let cool until they are easy to handle. Divide each baked potato in half and then cut each half into 3 wedges. Dip in melted butter, and place in an oven-proof baking dish in a single layer, if possible. Grind sea salt over the top of all the potato wedges, and then grind black peppercorns over the top, to taste. Place the dish of potato wedges back in the oven at 350 degrees for about 10 minutes. When crisp and tender, remove from oven. (I turned my oven to broil for the last minute or so, in order to get the potato wedges crispier.) Serve immediately, while hot. These are wonderful with grilled steak or chicken! I hope you enjoy them!!! --Betty 

Ingredients: 2 large Idaho baking potatoes, washed and dried cooking spray sea salt 1/2 stick butter or margarine at room temperature 1/2 cup sour cream 1 cup shredded Cheddar cheese 1/4 cup snipped green onions Heat the oven to 400 degrees. Cut off an appropriate length of aluminum foil for wrapping each potato. Place each potato on its piece of foil, spray with cooking spray, and grind some sea salt all over the potatoes. Wrap each potato in its aluminum foil and place in the 400 degree oven to bake for 1 hour and 15 minutes. While the potatoes are baking, prepare the following topping. In a medium-sized bowl, mix 1/2 stick butter or margarine (room temperature), 1/2 cup sour cream and 1 cup shredded Cheddar cheese. After mixing these three ingredients, add the 1/4 cup snipped green onions and blend in lightly. Remove the 2 potatoes from the oven, test for doneness by rolling them in your hand (with a potholder). They should feel slightly soft. Remove the foil covering them, and transfer each potato to its serving dish. Salt and pepper the potatoes to taste. Place a generous amount of topping on the top of each potato. Eat immediately while hot and delicious!

Betty has previously posted a creamy macaroni and cheese recipe (made with Velveeta), but this recipe has sharp cheddar cheese and has flavor and crustiness that is to die for!!! Ingredients: 8 oz. elbow macaroni water, salted with 1 tablespoon salt 3 tablespoons butter or margarine 1/4 cup flour 2 cups milk (I use skim milk.) 2 cups shredded cheddar cheese 1/2 teaspoon salt Cook the macaroni in a medium to large pot that is half-full of boiling water, salted with 1 tablespoon of salt. Place 8 oz. of macaroni in the boiling water. It will take about 8 minutes for the macaroni to cook to a consistency that is al denti (chewy, but not mushy). It will continue to cook when baked in the casserole. Meanwhile, prepare your cheddar cheese sauce. In a medium-sized sauce pan, melt 3 tablespoons butter or margarine, and add 1/4 cup flour. Mix the flour thoroughly into the melted butter or margarine. Do not combine the flour and butter over heat at this point. Add 2 cups milk, 2 cups shredded cheddar cheese, and 1/2 teaspoon salt. Mix thoroughly. Now, place the cheese sauce over low heat, and cook and stir until the mixture is smooth and cooked through. Move the cheese sauce to a "warmer-type" burner until your macaroni is done, and stir it occasionally. These are whole baking potatoes that have been peeled and cut into slices (almost to the bottom), then drizzled with butter, sprinkled with salt, topped with a glorious blend of herbs and cheeses and baked in the oven. They make a great accompaniment to almost any meal! Note: I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed. Add ¼ cup melted butter, 1 cup finely shredded Parmesan cheese, ½ cup chopped green pepper, 1/3 cup chopped onion, ½ teaspoon seasoned salt, ½ teaspoon seasoned pepper, and ¼ teaspoon garlic powder. Stir all ingredients, until potatoes are completely coated. Place coated potatoes in a medium casserole dish with a lid (or cover with aluminum foil) and bake at 350 degrees for about 40 minutes, covered. Then remove the lid (or foil) and bake 10 minutes longer. Finally, turn your oven to broil for 3 minutes to brown the potatoes on top. The potatoes are baked in the oven, scooped out and mixed with some fantastic, flavorful ingredients, and then returned to their shells and baked again. They're terrific!!! Ingredients: 2 medium to large baking potatoes cooking spray (optional) sea salt (optional) 1/2 cup shredded cheddar cheese 1/2 cup sour cream 1/2 stick butter, softened to room temperature 1/4 cup green onions, chopped 1 tablespoon fresh chopped parsley 1/2 teaspoon salt dash of black pepper 3 to 4 slices of crisp fried bacon, crumbled 1/2 cup shredded Cheddar cheese (for topping) paprika to taste Spray the potatoes with cooking oil, and then grind some sea salt on them. Place them in an oven-proof dish and bake at 400 degrees for 1 hour. While the potatoes are baking, combine 1/2 cup shredded Cheddar cheese, 1/2 cup sour cream, 1/2 stick butter, 1/4 cup chopped green onions, 1 tablespoon chopped parsley, 1/2 teaspoon salt, and a dash of black pepper. Cover this mixture with plastic wrap, and refrigerate it while your potatoes cook. When your potatoes are done, split each of them into two equal halves with a knife. Since they will be hot, hold them with a potholder while you scoop out the potato meat. Place the potato meat in a dish, and reserve the potato shells.
