NEW MYSPACE Come chat with me live! facebook twitter 1/2 cup old-fashioned oats 2 1/4 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup unsalted butter, room temperature 1 cup (packed) light brown sugar 1 cup sugar 2 large eggs 1 teaspoon pure vanilla extract 4 ounces English toffee candy (recommended: Heath or Skor bar), finely chopped 1 cup hazelnuts, toasted, husked, and chopped 1 (12-ounce) bag semisweet chocolate chips Preheat the oven to 325 degrees F. Line 2 heavy large baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside. Using an electric mixer, beat the butter and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. Stir in the toffee, hazelnuts, and chocolate chips. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1-inch apart (do not flatten dough). Bake until the cookies are golden (cookies will flatten slightly), about 15 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely. (The cookies can be prepared 1 day ahead. Store airtight at room temperature.)

Betty's Oven-Baked Parmesan Potatoes Recipe In this video, Betty demonstrates how to make Oven-Baked Parmesan Potatoes. If you are tired of repeating the same kind of potatoes with your meals, this is a different look and taste for potatoes that you will like! Ingredients: 3 large baking potatoes (I used Russet potatoes.) ¼ cup butter, melted 1 cup finely shredded Parmesan cheese ½ cup chopped green bell pepper 1/3 cup chopped onion ½ teaspoon seasoned salt ½ teaspoon seasoned pepper ¼ teaspoon garlic powder Peel 3 large baking potatoes, and cut them into cubes or wedges, about ¾-inch on a side. Place them in a medium mixing bowl. Add ¼ cup melted butter, 1 cup finely shredded Parmesan cheese, ½ cup chopped green pepper, 1/3 cup chopped onion, ½ teaspoon seasoned salt, ½ teaspoon seasoned pepper, and ¼ teaspoon garlic powder. Stir all ingredients, until potatoes are completely coated. Place coated potatoes in a medium casserole dish with a lid (or cover with aluminum foil) and bake at 350 degrees for about 40 minutes, covered. Then remove the lid (or foil) and bake 10 minutes longer. Finally, turn your oven to broil for 3 minutes to brown the potatoes on top. Betty's No-Bake Chocolate Oatmeal Cookie Squares Recipe In this video, Betty demonstrates how to make No-Bake Chocolate Oatmeal Cookie Squares. This was a special request from her son-in-law, Chris, who preferred these cookies to the traditional birthday cake for his birthday celebration! They are dark chocolate flavor, and contain peanut butter and oatmeal, making them more nutritious than the average cookie. Ingredients: ½ cup milk ¼ cup butter or margarine, melted ½ cup cocoa 2 cups sugar 1 teaspoon vanilla extract ½ cup smooth or chunky peanut butter 2 ½ cups quick-cooking oats Place ½ cup milk, ¼ cup melted butter or margarine, ½ cup cocoa, and 2 cups sugar into a saucepan and bring to a boil over medium heat, stirring to dissolve sugar. Boil for 1 minute, stirring constantly. Remove from heat, and stir in 1 teaspoon vanilla extract, ½ cup peanut butter, and 2 ½ cups quick-cooking oats. You may finish these cookies up in a couple of ways. 1) Drop by teaspoonfuls onto waxed paper, and let set up for about ½ hour or 2) Pour mixture into a large (13-inch by 9-inch by 2-inch) greased pan and cool, then cut into equally-sized squares. This is a traditional cookie recipe in my part of the country. These cookies are great as snacks for children, and are great as lunchbox items, but big kids like them, too!

Ingredients: 2 medium to large baking potatoes cooking spray (optional) sea salt (optional) 1/2 cup shredded cheddar cheese 1/2 cup sour cream 1/2 stick butter, softened to room temperature 1/4 cup green onions, chopped 1 tablespoon fresh chopped parsley 1/2 teaspoon salt dash of black pepper 3 to 4 slices of crisp fried bacon, crumbled 1/2 cup shredded Cheddar cheese (for topping) paprika to taste Spray the potatoes with cooking oil, and then grind some sea salt on them. Place them in an oven-proof dish and bake at 400 degrees for 1 hour. While the potatoes are baking, combine 1/2 cup shredded Cheddar cheese, 1/2 cup sour cream, 1/2 stick butter, 1/4 cup chopped green onions, 1 tablespoon chopped parsley, 1/2 teaspoon salt, and a dash of black pepper. Cover this mixture with plastic wrap, and refrigerate it while your potatoes cook. When your potatoes are done, split each of them into two equal halves with a knife. Since they will be hot, hold them with a potholder while you scoop out the potato meat. Place the potato meat in a dish, and reserve the potato shells. (It is important that this is done while the potatoes are hot.) Mix the potato meat with the mixture that you have previously made. Now blend in ...

Betty's Best-Ever Oven-Baked Tuna Casserole Recipe In this video, Betty demonstrates how to make her Best-Ever Oven-Baked Tuna Casserole recipe. It is creamy and crusty and full of wonderful Parmesan cheese--the best tuna casserole around! Ingredients: 6 oz. uncooked pasta (I used bow-tie pasta.) 1/2 medium, to large pot of water, salted with 1 tablespoon salt 2 tablespoons butter 1/4 cup flour 1 1/2 cups grated Parmesan cheese 1 1/2 cups milk for cheese sauce (I use skim milk.) 1/4 teaspoon salt (2) 6-oz. cans chunk light tuna in water, drained 1 additional cup milk (while blending casserole together) 1/2 cup frozen green peas cooking spray Fill a medium to large pot one-half full of water. Add 1 tablespoon salt, and bring the water to a full boil. Add the 12 oz. of pasta, and bring to a boil. Cook for 7 to 10 minutes, until al dente (chewy--not mushy). While the pasta is cooking, prepare your casserole cheese sauce. Melt 2 tablespoons butter in a saucepan on the stove. Remove from heat and stir in 1/4 cup flour an stir vigorously, until the two are blended into a roux. Add 12 oz. (1 1/2 cups) grated Parmesan cheese, 1 1/2 cups milk (I use skim milk), and 1/4 teaspoon salt. Now cook and stir continuously for a minute or two, and then occasionally. The sauce should be thick and smooth about the same time that the pasta is cooked. Drain the pasta in a colander in the sink and place the pasta back in the pot. Stir in 1 additional cup milk, (2) 6 oz. cans chunk light tuna, drained, and 1/2 cup frozen green peas. Mix ...

Frosted Oatmeal Bars (no bake) These taste very much like granola bars 3 cups quick cooking oats 1/2 cup brown sugar packed 1/2 cup butter or margarine 1/2 cup honey or corn syrup 1/2 cup semi sweet chocolate chips 1/4 cup peanut butter In a medium bowl, combine oats, sugar, butter and honey (or corn syrup). Microwave on high for 4 1/2 minutes or until bubbly, stopping to stir 2 times. LIGHTLY spread in an 8x8 baking dish (greased). Cool slightly. In a small bowl combine chocolate chips and peanut butter. Microwave on high for 1-1 1/2 minutes or until chips are melted. Stir and spread over the oatmeal base. Cut into squares while still warm. These would be much better if one added chopped almonds and/or raisins to the oatmeal base. I would also recommend the honey instead of the corn syrup. Betty's Oozing with Goodness Baked Macaroni and Cheese Recipe In this video, Betty demonstrates how to make her marvelous Baked Macaroni and Cheese recipe. Betty has previously posted a creamy macaroni and cheese recipe (made with Velveeta), but this recipe has sharp cheddar cheese and has flavor and crustiness that is to die for!!! Ingredients: 8 oz. elbow macaroni water, salted with 1 tablespoon salt 3 tablespoons butter or margarine 1/4 cup flour 2 cups milk (I use skim milk.) 2 cups shredded cheddar cheese 1/2 teaspoon salt Cook the macaroni in a medium to large pot that is half-full of boiling water, salted with 1 tablespoon of salt. Place 8 oz. of macaroni in the boiling water. It will take about 8 minutes for the macaroni to cook to a consistency that is al denti (chewy, but not mushy). It will continue to cook when baked in the casserole. Meanwhile, prepare your cheddar cheese sauce. In a medium-sized sauce pan, melt 3 tablespoons butter or margarine, and add 1/4 cup flour. Mix the flour thoroughly into the melted butter or margarine. Do not combine the flour and butter over heat at this point. Add 2 cups milk, 2 cups shredded cheddar cheese, and 1/2 teaspoon salt. Mix thoroughly. Now, place the cheese sauce over low heat, and cook and stir until the mixture is smooth and cooked through. Move the cheese sauce to a "warmer-type" burner until your macaroni is done, and stir it occasionally. Betty's Perfect Loaded Baked Potato Recipe Betty demonstrates how to make the perfect loaded baked potato in this video. Ingredients: 2 large Idaho baking potatoes, washed and dried cooking spray sea salt 1/2 stick butter or margarine at room temperature 1/2 cup sour cream 1 cup shredded Cheddar cheese 1/4 cup snipped green onions Heat the oven to 400 degrees. Cut off an appropriate length of aluminum foil for wrapping each potato. Place each potato on its piece of foil, spray with cooking spray, and grind some sea salt all over the potatoes. Wrap each potato in its aluminum foil and place in the 400 degree oven to bake for 1 hour and 15 minutes. While the potatoes are baking, prepare the following topping. In a medium-sized bowl, mix 1/2 stick butter or margarine (room temperature), 1/2 cup sour cream and 1 cup shredded Cheddar cheese. After mixing these three ingredients, add the 1/4 cup snipped green onions and blend in lightly. Remove the 2 potatoes from the oven, test for doneness by rolling them in your hand (with a potholder). They should feel slightly soft. Remove the foil covering them, and transfer each potato to its serving dish. Salt and pepper the potatoes to taste. Place a generous amount of topping on the top of each potato. Eat immediately while hot and delicious!

Sesame Street - Dogs bake homemade bread This is a rare post for me because it's a Sesame Street segment from the mid to late 90's. Although I collected tons of 70's classic segments, I recorded this one because I found it hilarious. This is the funniest "modern" Sesame Street segment I have seen! In fact, the ONLY funny one in my opinion. There were a few of these "dumb dog" segments in the 90's but this is the only one I have. I'm sure it's the funniest one though. This video will attract the "younger" Sesame Street fans, who by far out-populate the older fans like me. These are whole baking potatoes that have been peeled and cut into slices (almost to the bottom), then drizzled with butter, sprinkled with salt, topped with a glorious blend of herbs and cheeses and baked in the oven. They make a great accompaniment to almost any meal! Note: I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed. Ingredients: 2 medium baking potatoes ½ teaspoon salt 1 ½ tablespoons butter or margarine, melted 1 tablespoon of chopped fresh herbs (I used parsley, chives, thyme, and sage. You may use any or all of these. If you used dried herbs, use only 1 teaspoon altogether.) 2 tablespoons finely shredded sharp Cheddar cheese 1 tablespoon finely grated Romano or Parmesan cheese (I use Italian Peccorino Romano cheese.) cooking oil spray Wash and peel potatoes. Keep covered with water until ready to use. When ready to assemble recipe, dry the potatoes with a paper towel. Cut potatoes into thin slices, but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish that has been sprayed with cooking oil. Fan the potatoes slightly. Sprinkle with salt and drizzle with butter or margarine. Sprinkle with herbs. Bake potatoes at 425 degrees for about 50 minutes. Remove from oven and sprinkle with cheeses. Its layered with hot Italian sausage and some ground beef, onion, and bottled Italian and tomato sauce, along with mozzarella and Parmesan cheese. Scrumptious! Ingredients: 1 pound hot (or mild) Italian sausage, with casings removed ½ pound lean ground beef 1 medium onion, chopped 1 teaspoon salt (for cooking pasta) a splash of extra virgin olive oil (for cooking pasta) 12 oz. penne rigate, cooked according to package directions (You may use any type of pasta that you like.) 26 oz. jar Italian sauce (I used Prego.) 8 oz. can tomato sauce 12 oz. sliced mozzarella cheese (or more, to taste) ½ cup grated Parmesan cheese cooking oil spray In a deep skillet, cook 1 pound Italian sausage, ½ pound ground beef, and 1 medium chopped onion, stirring constantly until meat is browned. Drain meat mixture. Cook 12 oz. penne rigate pasta, according to package directions. (I added 1 teaspoon salt and a splash of olive oil, and cooked the pasta for about 8 minutes.) Drain pasta. In your deep skillet, combine browned meat mixture, cooked pasta, a 26 oz. jar Italian sauce, and an 8 oz. can of tomato sauce. Stir until thoroughly combined.
