Black pepper corns/kali mirch dane - 1 tea spoon Whole clove/laung - 1/3 tea spoon Dry red chili - 2 (optional) Cinammon/dal chini - 3 sticks - 2 inch long Dry Kasturi methi leaves - 2 tea spoons Ingredients NOT to roast: Hing/Asofoetida - 1/4 tea spoon Nutmeg powder - 1/4 tea spoon Lace/Javetri powder - 1/4 tea spoon Dry ginger powder - 1/2 tea spoon Small green cardamom/elaichi - 1/2 tea spoon Big Black cardamom/elaichi - 2 pods Annar dana or pomegranate seeds pwder - 2 tea spoon Process: On a thick bottom pan dry roast ingredients one at a time on MEDIUM heat till you can smell their aroma. Stir constantly. Cumin seeds - 1 tea spoon light roast. Remaining 1 tea spoon NO roast Kasturi methi leaves - roast 10 secs on LOW heat Empty in a plate and let cool. Break cinnamon sticks into small pieces by hand. Grind all roasted spices along with cardamom pods into a powder. Mix with unroasted spices. READY........
